Roasted Beets




I LOVE beets!  I have been a huge fan of them since I was a kid.  One of my favorite ways to eat them is roasted.  The sweet flavor really comes through.  If you have never had them roasted, give them a try.  They are SO delish! 

Roasted Beets
Perfectly sweet and savory.

Equipment: Roasting Pan (I use stoneware), Small Mixing Bowl

  • 6 medium-size beets (any variety)
  • 1 ½ tablespoons pasture butter, melted (See Resources)
  • Celtic sea salt

1.     Preheat oven to 400 degrees F.
2.    Melt butter or fat of choice.
3.    Prep beets, remove tops (save for later if you like beet greens), and remove outer peel with a paring knife.  Cut into small ½ chunks and place in small mixing bowl.   


4.    Pour melted butter over beets, season with sea salt and mix to coat evenly.
5.     Pour beets onto a roasting pan in an even layer.  Roast for 10 minutes, stir and roast for another 10-15 minutes or until fork tender.


6.    Serve immediately or refrigerate for later use.   

Yield: Makes about 3 cups roasted beets.

Storage: These keep well in the refrigerator. 

Serving Suggestions:  Serve as a warm veggie side dish, mix into a green salad, serve with organic goat cheese, serve with herb-cream sauce, etc.
