OIL FREE ONION PAKODAS

AIR FRYER OIL FREE ONION PAKODASIngredients
  1. Besan -  1 cup
  2. Sliced onions
  3.  coriander powder
  4. Ajwain
  5. Roasted jeera powder
  6. Salt to taste
  7. Methi
     Method:
  1. Mix all ingredients in a large bawl with few tea spoons of water and make small sized pakoda with a little bit of oil applied on your palms. For more crispness make sure you do not make them too wet.
  2. Preheat the air fryer at 200 degree.
  3. Place the pakodas on the small sheets of oiled aluminium foil (see picture below) and airfry for 5 minutes. After this give it a shake and keep for 5 more minutes, until all sides are golden brown.
  4. Serve hot with green chutney or ketchup.

Cranberry Pear Orange Smoothie



This is my FIRST YouTube video. It's a little rough. Completely unscripted. And way too long. But, you get the point. Here's the recipe:

1 cup cranberries
3 Cutie (small) oranges
1 Pear, halved
1 Cup yogurt
1 tsp vanilla extract

Plantain Chips Nachos



Living near a Trader Joe's is probably the best move I have ever made. For those of you not familiar with the chain, a quick Google search will tell you about the grocery store but all you really need to know are three words: cheap organic food. They also have tons of inventive real foods- like these plantain chips.

Plantains are not sweet despite looking much like a banana. They are starchy and quite bland, unless seasonings are added. These plantain chips are simply roasted and salted. And being under $2 a bag is worthy of notation as well.

Use them like tortilla chips and build your own Paleo nachos.
(sorry, plantains are too starchy and not SCD compliant)

Ingredients:

Handful of plantain chips
Shredded chicken
Grated cheese (I use the raw milk cheddar also from TJ's)
Salsa, of choice
Diced tomatos
Diced avocado
Hot sauce

Directions:

Lay plantain chips out in an even layer across a plate.
Add chicken and cheese and microwave for 45 seconds or until cheese is just melted.
Add salsa, tomatoes, avocado, hot sauce, or whatever else you want.
Eat.

Clearly, this is entirely customizable!

Saru maas Bhaji.....(small fishes stir fry)

সরু মাছ ভাজি 

Ingredients:

  • Small fishes -200 grm (Here I have used a variety of locally found small fishes including Mua, puthi, chanda, darikona maas)
  • 1 big sized onion- chopped
  • 8-10 garlic cloves
  • 2-3 green chillies
  • Turmeric- 2 tsp
  • Salt to taste
  • Mustard oil for frying
  • coriander leaves 


Method:
  • Clean the fishes and smear them in turmeric and salt
  • In a hot pan add mustard oil. Half fry the fishes and keep aside
  • In the remaining oil add garlic, chillies, onions, a little bit of salt (if required) and fry for 2 minutes 
  • Now add the half fried fishes.Mix all and stir fry them for about 5 minutes
  • Add coriander leaves and mix well
  • Serve hot

Pork curry cooked with potato & lots of coriander leaves


গাহরির মাংস আলু আরু ধনিয়ার লগত 

Ingredients:
  • 500 grm fresh pork
  • 2 large chopped onions 
  • One tomato-cut into medium pieces
  • 2 mid sized potato (cut in cubes)
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • Salt ( according to your taste)
  • 1/2 tsp crushed black pepper
  • 2 bay leaf
  • 1 green chili
  • 4-5 tbs mustard oil
  • 1tsp freshly ground garam masala powder
  • Coriander leaves-1 cup chopped

Method:
  • Heat oil in a pressure cooker without the lid. Add chopped onion and fry them till light golden.
  • Add bay leaf, chili,ginger-garlic paste and fry it for a minute .
  • Then add crushed pepper, cumin powder, turmeric powder and fry till oil separates
  • Now add pork pieces and the potato pieces. Mix it well 
  • Add tomato pieces and fry it for 15 minutes.
  • Now add two cups of water plus 1/2 cup of coriander leaves and pressure cook for 3-4 whistles
  • Once cooled sprinkle freshly ground garam masala powder plus 1/2 tsp crushed black pepper and mix the curry well
  • Garnish with fresh coriander leaves and serve

Sorioh dia maasor jool ( Fish in mustard gravy)

সরিয়হ  দিয়া মাছ 

Though this dish is originally a Bengali dish, it is very among the Assamese people. We all know that Assamese cuisine has some external influences....
Ingredients:

For the Paste:

  • Yellow mustard seed 3-4 tsp (soaked in little lukewarm water)
  • A pinch of salt

Put the all ingredient in a mixture grinder and make a smooth paste.

For the cooking:


  • 4-5 fish pieces (Ilish/Bhokua or Rou)
  • 2 tsn mustard Oil 
  • 3-4 Green Chillies slit at the base
  • 1 tsp turmeric Powder
  • ½ tsp Chilli powder
  • 2 cups Water
  • Salt to taste

Method:

  • Smear the fish pieces with salt and turmeric powder first
  • In a hot pan add mustard oil and shallow fry the fish pieces...when done keep aside (If you want you can skip the frying process . you can directly put the marinated pieces into the boiling gravy also)
  • In the remaining hot oil add the mustard paste, turmeric powder, chilli powder
  • Mix the all ingredients for 1-2 minutes and add some water
  • Add the slit green chillies and bring it to boil
  • Now add put the fried fish pieces into the boiling gravy
  • Slow down the heat. Cover and cook for 10 minutes
  • Uncover and check the consistency and adjust salt.
  • Before serving add few drops of raw mustard oil for enhancing the flavor
  • Serve it with steamed rice......

Simple Chicken With Broccoli (paleo, scd)



The majority of the population is on a diet right now and this is an easy, healthy recipe, feel free to use olive oil or coconut oil in substitution to the butter if you so desire. In my humble opinion, though, nothing compares to good ol' fashioned Kerrygold.

Ingredients:

 4 Tbsp butter, divided
1 bunch of broccoli (about 3 cups of florets)
1/2 large onion
1 tsp garlic salt

1.3 lbs chicken breast, cut into one inch cubes
1/2 tsp thyme

Directions:

Over medium-high heat in a large pan
Add 1 Tbsp of butter to hot pan and add minced onion. Saute until browned.
Add 1 more Tbsp of butter and add broccoli to cooked onion.
Sprinkle with garlic salt and cover.
Check every few minutes and when broccoli is tender remove from heat.
Remove from pan.
Add remaining 2 Tbsp of butter and heat to medium high.
Add chicken and sprinkle with thyme.
Cover and stir occasionally until cooked through.
Combine chicken and broccoli mixture.
Serve and enjoy.
