2016 Super Bowl Prediction Using Chicken Wing Bones

Welcome to this year’s installment of “Get Rich Quick with Chef John,” where you cash in on my mystical method for picking Super Bowl winners, using the lost art of wing bone reading. I know it sounds crazy, but if you think this is some kind of joke, think again. In the 49 years I’ve been doing this, there hasn’t been a single (major) university study proving these results aren’t 100% accurate. Not one single study.

Sure, we’ve had a couple of recent, very minor “discrepancies,” but instead of wasting time arguing who's at fault, or who lost who’s college fund, I prefer to look toward the future. This year the bones point to a decisive Carolina victory, and while I’ll be personally rooting for Old Man Manning, if you want to win money, you’ll put everything you have on the Panthers.

I’m just glad the Patriots aren’t in it. They’re shady. Anyway, good luck, and I’ll apologize in advance for any income tax issues that pop up after this windfall. Good luck, and as always, enjoy!

Next Up: Something with Peach

I think I’m going to start a new tradition, where the first video I post after a vacation, is whatever the most delicious thing I had during my time away was. I don’t want to spoil the surprise, but I can tell you it involved peaches, and was amazing. Stay tuned!

Have a Great Fourth of July Weekend!

We’re going to take a couple days off for the holiday, but wanted to wish you a very safe, and festive 4th of July!

Fabulous summer cookouts are just one of the many things that makes America great, and I hope you’re involved one of those tomorrow; preferably serving something you saw on Food Wishes (like the no-baked cheesecake flag cake pictured here). Enjoy the food, the fireworks, and possibly the adult beverages, and we’ll be back next week with brand-new videos, as usual. Stay tuned!

What’s Cooking? Allrecipes.tv That’s What!

Even though it will be business as usual here on the blog and Foodwishes’ YouTube channel, one advantage of the new partnership with Allrecipes will be working with my friend, Michael Ketchum, the host and brains behind Allrecipes.tv.

A few years ago, I thought it would be a cool idea to travel around the country for a few months, filming favorite recipes in some of our viewers’ homes. I didn’t have any travel funds for such a trip, so when my sponsorship pitch to Amtrak was politely declined, the idea was shelved. Well, that concept is basically what Michael’s “What’s Cooking?” is all about.

In each webisode, an Allrecipes' home cook shares the tips, tricks, and stories behind their favorite dishes. Anyway, I wanted to introduce you to Michael and Allrecipes.tv, and hope you’ll head over to take a look at their collection of video recipes. Here, Michael joins Kerri in Hutto, Texas, to capture her making a batch of tender pork spare ribs. You can subscribe to the Allrecipes' YouTube channel here.

By the way, I’ll have a brand new video recipe up tomorrow for shrimp and ham gravy (see photo below). Enjoy!

#APieforMikey: Love and Loss in the Age of Twitter

Monday, my friend Jennifer Perillo lost her husband, Mikey. At age 51, he suddenly collapsed and died from a massive heart attack – with no warning, he was here one moment, gone the next. I heard about this on Twitter.

The initial shock and disbelief was quickly swept away by waves of profound anger. Not directed towards anyone or anything, I was simply mad at the universe for this cruelly random and incomprehensible event.

I’ve only met Jennifer once, spending a few carefree days with her at a food event in Sonoma a couple years ago, but through our blogs, and more so Twitter, we had become good friends. For all its superfluous minutia, the social network not only makes real friendships possible, it makes them inevitable.

Instead of withdrawing into the darkness, and shutting out the world, Jennifer used her social network to share her grief, and help her cope with this unimaginable loss. She did so with a courage, dignity, and grace far beyond anything I could have managed.

Inundated by online friends asking what they could do to help, she suggested making this Creamy Peanut Butter Pie, as it was a favorite of Mikey’s. If you search the hashtag, #APieforMikey, you’ll see a truly astonishing outpouring of love and support. As I tweeted yesterday, if there's a stronger, more generous and caring online community than food bloggers, I don't know what it would be.

As many of you know, this has been quite an amazing week for me personally, with the announced acquisition. I don’t think I’ve ever experienced such a crazy, hectic week of soaring highs, and gut-punch lows. So, for reasons too trivial to mention, I haven’t made the pie yet, which is okay, since the tribute really isn’t about the pie.

It’s about making something delicious for someone you love, sharing it with them, and then, in Jennifer’s words, “Hug them like there's no tomorrow because today is the only guarantee we can count on.” This is something Michele and I try and do on a regular basis.

Anyway, stay tuned for a future video recipe tribute to Jennifer and Mikey. In the meantime, I wanted to share this extraordinary video done by the incredibly talented White On Rice Couple, Todd and Diane. This has to be the most powerful, sincere, and touching food video I’ve ever seen. Enjoy.

BREAKING NEWS: Food Wishes Has Been Acquired by Allrecipes!

It is with tremendous pride and gratitude that I announce Food Wishes has been acquired by Allrecipes.com. Not only is this tremendously good news on a personal level, but it also means joining forces with the world's number one digital food brand.

While I’ve done a decent job of growing the brand, I’m very much looking forward to having our content in front of a new, significantly larger audience, and that’s exactly what this makes possible.

If you’re worried this move is going to result in fewer, or differently formatted videos, relax. If anything, this move allows me the freedom to produce more content than ever before, and this was one of the main reasons I decided to take the deal.

A million thanks for all your amazing support and generosity. This would not, could not, have happened without you. Stay tuned!

What Do You Know About Peach Cobbler?

Photo (c) Flickr User: Neil Conway
I've never made a peach cobbler. I've made peach crumbles, peach crisps, peach tarts, peach pies, and peach parfaits, but not one single cobbler.

I've been doing some research for an upcoming video, and I'm leaning towards the classic southern style where the batter bakes up through a buttery layer of peaches and juice to form a beautifully browned crust over the top. I literally just made myself hungry typing that sentence! If you have any "to die for" peach cobbler recipes, please pass them along! Thanks and stay tuned!

Coming Soon: Almost a Swordfish Recipe

Tomorrow we'll be doing a little experiment involving this incredibly delicious swordfish preparation. I didn't film the making of the dish, but when I went to serve it, I decided it was too good not to share, so the plating was captured in all it's brief, but beautiful glory. Will I still be able to "teach" you the recipe? Stay tuned!

Please Nominate Chef John for a 2012 Tasty Award!

Yes, it's that time again! The Tasty Awards are an annual awards show celebrating the best in food and fashion programs on TV, in film, and online. Last year, we won the award for "Best Home Chef in a Series," and would love to defend the title this year.

If you'd like to help with the nomination, please follow this link and cast your vote. The two categories we qualify in are "Best Food Program - Web" and "Home Chef in a Series." Thank you for the support!

I'm Getting Older Soon

Photo (c) Flickr user mylerdude
Michele and I are heading to Sonoma today for a few days of rest and relaxation. It's my birthday Monday, and I can’t think of a more beautiful spot to celebrate. Despite my rapidly approaching old age, I was able to hustle and finish a brand new video recipe this weekend, which I'll post tomorrow. Stay tuned!

Happy 4th of July!

Photo (c) Flickr user mmatins
Wishing you all a fun, festive, and hopefully food-filled Fourth of July! Michele and I are laying low this year, finishing up some big projects around the house. But don't worry, "all work and no play" is not something patriot Americans like us are known for. There will be enough beer, baseball and barbecue around to properly give respect to the greatest country on earth. Happy birthday America!

In what's become a little July 4th tradition on the blog, here's “Stars and Stripes Forever” played by four girls, in matching shirts, on the Trombone. Since there are probably only nine or ten girls in the entire country that play trombone, to see four in one clip is a special treat. Enjoy!

Almanac Beer – Won't Help You Forecast the Weather, But Will Help You Not Care

I'd like to congratulate my friend, and resident Food Wishes beer consultant, Jesse Friedman, who has recently taken the plunge into the wild and wacky world of self-employment. You may know Jesse as the publisher of Beer & Nosh, but very soon, you'll also know him as the wildly successful co-creator of Almanac Beer. By the way, if you're going to quit your day job, and say goodbye to all the safety and security it affords, then having lots of craft beer around is probably not a bad idea.

After years of hard work and experimentation, Jesse and his partner Damian will be officially releasing their "farm to barrel" brew on Thursday, June 30. I had the pleasure of tasting some this spring, and was quite impressed. I've just returned from LA after three grueling weeks, and way too tired to come up with the appropriate adjectives to describe the beer, so instead I'll simply invite you to watch the video below, and then give the Almanac Beer blog a visit for more information.

FYI: I'm back in the kitchen tomorrow and should have a long overdue video recipe up by the end of the day. Stay tuned!

Metaphorically Speaking

Wow, it's been three days since my last post, and six days since my last video, and that my friends, is a new Food Wishes record. That's how insane the schedule's been working on the show down here in Los Angeles.

Not only haven't I had much time to film, but I also haven't had any time to visit with my SoCal food blogger buddies, which means I haven't been going to any fabulous restaurants. However, I did have a very nice Korean lunch on Friday, at a place next to our office called, Genwa, where I filmed this 100% cotton-based excuse for a lame metaphor.

Right about now, I feel exactly like those tightly wound wads of gauze, desperate to be soaked with lots of clean, warm time. I'll be back in San Francisco Tuesday, and I can't wait to get wet! Stay tuned!

Good News, Bad News, Good News from Hollywood

Photo (c) bdearth
The good news is that everything is on schedule and going great down here in Hollywood. The bad news is that the next few days are dawn to dusk television production insanity, and there will no time to post anything, not even one of my lame re-runs.

The good news is that when I get back to San Francisco on Tuesday, my schedule is finally clear, and I'll have nothing to do except film video recipes – and believe me, I have quite an impressive list of dishes to share. Stay tuned!

A Food Woolf in New Orleans

I've been thinking about using my iPhone to do more quick movies for days in between the recipe videos. You may have seen my recent, How to Eat a Hamburger demo, which is the only type of thing I thought I should be using the überphone for.

That was until I saw my friend Brooke's short film teasing a post she's doing on a recent press trip to New Orleans. When I finished watching it, two thoughts immediately percolated up.

The first was why the hell wasn’t I invited on this trip? Hey, Louisiana Seafood Board, expect a call from my people Monday morning. Supplying us with delicious, sustainable fish doesn't get you off the hook (see what I did there? I think I've made my point).

Then I thought, instead of making one-note, me-eating-something-somewhere iPhone videos, why don't I actually try telling a story? So, thanks Brooke, for making me look at something in a different way. Every time I do, good things happen.

Speaking of good things, after you watch the video, be sure to head over to her thoughtful and extremely well written blog, Food Woolf, to read the full post. Enjoy!

"Can't Boil Water" Starring…Me?

A couple days ago I mentioned that I was down in LA on some semi-secret business. Believe it or not, I was hired on as the Senior Food Producer for a new ABC pilot called "Time Machine Chefs."

I'll be here for a few weeks helping make sure this is the biggest smash hit cooking show since Top Chef. I wish I could give more details, but for obvious reasons I can't.

I was brought in by my great friend, Jude Weng, a very talented and accomplished producer who specializes in unscripted television shows (she worked on the very first Survivor!). Speaking of unscripted television shows, the video below is the sizzle reel (which is a sort of quick and dirty mini-pilot) we did together a few years ago for a show idea called, "Can't Boil Water."

It hasn't been picked up yet, but who knows, maybe now that she's given me permission to post it, a bunch of offers will roll in. I'm joined by my student, Becky Nuse, her fiance Mario, and my good buddy, Sara (aka Average Betty). Enjoy!

Coming Soon: How to Make Perfectly Pink Hamburgers

I just found out that amazingly delicious cheeseburger you saw in the Pinot-Glazed Mushrooms video can't air until July, 27th. It was a sponsored post, so I have no choice but to wait, however I did film some extra footage during that session on how to get a perfectly pink burger. I'm in Los Angeles on some semi-secret business, but I should have this hopefully helpful how-to up tomorrow evening. Stay tuned!

Coming Soon: Grilled Mahi Mahi with Spicy Thai Chili Mango Sauce

I will explain all this later. Thank you. Come again. UPDATE: This was edited and posted during my IACP session (which explains the brief and cryptic first sentence), that I blogged about yesterday. It went very well! I'll be back in San Francisco tomorrow, and will upload the full video then. Thanks!

UPDATE to the UPDATE: I'm back in San Francisco, but will not be able to upload the video today...unless you want it without any narration. :-) Stay tuned!

You Down with IACP? Yeah, You Know Me!

The travel craziness continues as I'm heading to Austin for the IACP 33rd Annual Conference. This year's theme is: "Light Your Fire: Sparks from the Culinary Edge."

I'll be doing a session entitled, "DIY Video Production for Food Bloggers," and will be joined by the lovely and talented Sara, from Average Betty, and Daniel Klein, chef and traveling food documentarian from The Perennial Plate. By the way, if you think I travel a lot, check this guy out.

I'm pretty excited to be doing a little teaching, as that's the one thing I do miss most about working at a culinary academy. I love the thought that folks may actually leave the session and be so inspired that they start filming and uploading food videos to their own blogs. Then, in a few years, there will be so many high-quality food videos online that their value will plummet, and I'll be out of business. Damn it! I didn't think this through.

On a related matter, here is a recipe by a new video recipe friend of mine, Marie Lévesque (aka PlatypusGuitar) from Montréal, Canada. She's the host of the Insanely Sexy Potato Show, and this is her Easy Salmon Croquette Recipe. Enjoy!
