With Valentines Day fast approaching, Rock Recipes has again teamed up with CBC Newfoundland and Labrador, this time to create a 3 course meal for you and your sweetheart. The recipes and recipe videos will roll out once a week leading to the big day in February. Today we start with this delicious appetizer course inspired by Maryland crab cakes. I've chosen shrimp to make the crispy cakes this time, in a bit of a different and slightly more economical twist.

They are delicious served over a simple green salad where the homemade cilantro lime aioli serves not only as a tasty accompaniment to the shrimp cakes but as a dressing for the salad as well. You can make the shrimp cake mixture earlier in the day, then just roll them in the crumb mixture and take a few minutes to fry them on the night of your dinner.

Shrimp Cakes with Lime Cilantro Aioli

Makes 6 appetizer sized shrimp cakes (serves 2-3)

·        1/2 pound coarsely chopped (NOT MINCED) fresh shrimp
·        1/2 cup cracker crumbs
·        2 tbsp mayonnaise
·        1/2 tsp lime zest, minced
·        1 tsp Worcestershire Sauce
·        1/4 tsp salt
·        1/4 tsp pepper
·        2 tsp hot sauce (optional) or pinch of chili flakes
·        1egg, lightly beaten
·        1 tbsp chopped cilantro
·        1/3 cup panko crumbs + 1/3 cup cracker crumbs mixed
·        Approximately  2/3 cup canola oil for frying

Toss together the shrimp meat with the 1/2 cup cracker crumbs, mayonnaise, lime zest,Worcestershire sauce, salt, pepper, hot sauce, egg and cilantro. 

Form into 6 balls by hand.Roll in the additional cracker crumb/panko crumb mixture. 
 
Heat about a half inch of canola oil in a skillet or sate pan over medium-low heat. You want these to fry gently; they will burn quickly if the oil is too hot.

Fry until golden brown on both sides. Drain on paper towels.

Lime Cilantro Aioli

·        1 clove garlic finely minced
·        1 tsp dijon mustard
·        1 large egg yolk
·        Pinch salt
·        Pinch black pepper
·        ½ tsp finely minced lime zest
·        1 tablespoon lime juice
·        ½ cup olive oil
·        1 tbsp chopped cilantro

Add the garlic, mustard, egg yolk, lime zest, salt, pepper and lime juice to a blender. Turn on the blender at medium to medium high speed. Pour in the olive oil very slowly in a thin, continuous stream until the aioli thickens. Pulse in the chopped cilantro at the end. Serve over the shrimp cakes.

This one so so quick and easy, you can have it on the table in under 20 minutes. After all those hours slaving over Christmas dinner, a tasty meal-in-minutes should be well appreciated after the Holiday chaos subsides. This dish will let you do all that Boxing day visiting and still have dinner on the table in no time. It would also make a terrific pot -luck contribution at post Christmas get-togethers.

During December we will be presenting turkey recipes in our continuing video series with CBC Newfoundland and Labrador to serve as a helping hand in getting the word out about their 9th annual Turkeys for Christmas Drive. Today we have a delicious leftover soup recipe that is inspired by another turkey leftover staple, the club sandwich. Hey, if the flavors work together in a sandwich, they will work together in a soup. One of my favorite additions to this recipe is the chopped fennel, a vegetable that I absolutely love for it's anise-like flavor. I think it adds a delicious note to the broth of this soup.

Homemade turkey stock is so easy to make and it is something that we always have at our house because we have roast turkey probably at least once a month. I simple break up the carcass of the turkey after using all of the leftovers and cover the bones with water. A little salt and pepper is all that you need to make a neutral stock that you can use for sauces, soups, and especially to give your turkey a helping hand and a flavor boost the next time you roast a turkey. At our house it's insurance that there will be plenty of luscious gravy, no matter how many people show up for dinner. Optional flavor additions to a good turkey stock can include, onions, celery, carrots, thyme or bay leaves in any combination. It really s your choice and depends on how you plan to use your stock.

I like to reduce stock considerably in order to concentrate the flavor, especially when using it for a deeply flavored, rich gravy.

This idea was inspired by a mango curry recipe. I decided that the unique flavor of bakeapples (cloudberries) was sufficiently exotic enough to hold up to the bold spice flavor of an Indian curry dish. The result did not disappoint. It was absolutely delicious.Of course many outside Newfoundland and Labrador will not have access to these beautiful berries but diced mango can easily be substituted for an equally delicious dish. Serve with steamed jasmine rice and/or naan bread.

You can use regular bread dough to make the naan or make your own naan dough using the recipe found here. If it's not outdoor grilling weather you can also cook the dough rounds on a hot, un-oiled cast iron pan.

Dinner party food should not be about you as the host being chained to the stove while your guests entertain themselves. My idea of a successful dinner party includes dishes that can be prepared almost completely in advance and require a minimum of attention except for plating and serving.

Today's video recipe is a terrific example of how very easy it can be to accomplish that goal with confidence. You can have the phyllo wrapped pastry bundles prepared and placed on a baking sheet in the fridge hours in advance, ready yo pop into the oven when your guests arrive. The tomato jam/compote can be prepared on the stove top or in the oven and quickly warmed up when ready to serve. A meat thermometer will take the guess work out of telling when the chicken is perfectly cooked and when your guests cut into the crispy pastry, releasing the oozing cheese, they are sure to be impressed and will no doubt think that you put far more effort into the dish than is actually required.

The classic margherita flavors of tomato, basil and mozzarella cheese get joined by slightly salty, thinly sliced prosciutto ham which helps to season the chicken. When served with the naturally sweet tomato jam and perhaps a simple pasta primavera, it will be a menu your guests are sure to remember.

The roasted tomato jam can be prepared as a tomato compote on the stove top in a saute pan if you prefer. Just cook it down until most of the liquid is gone.

Put this one on your to-do list for the upcoming Holiday entertaining season.

To date it has had very near 600 THOUSAND hits on the website, along with numerous testimonials and rave reviews on our social media outlets.
