Rustic Strawberry Basil Crostata {or Galette} with Lemon Mint Cream Cheese


Crostata or Galette?  They're basically the same thing, except one is French and one is Italian.  Crostata's or Galette's are not baked in a pan like a tart ... they're a flat layer of dough filled with sweet or savory yumminess + edges of the dough folded up around the filling.  I LOVE them!  Why you ask?  Because there is no pressure rolling out a perfect crust!  Crostata's or Galette's are meant to be rustic ... and that is a beautiful thing. 




Summer is not over in Northern California yet!  We are still soaking up the summer heat and enjoying August to its fullest.  The hot heat makes me want hydrating + nourishing drinks like lemon water, coconut water, vitamin C herbal iced tea agua frescas I crave refreshing drinks like cherry mint lemonade + lots and lots of homemade ice cream, especially sweet cherry ice cream and creamy watermelon ice cream.

When the temp goes up, I don't feel like cooking or using the oven much.  Honestly, when it's 90+ degrees, I just want to hang out with my little family in the shade and eat ice cream bon bons all day.  But that's not reality so I depend on simple, homemade cold foods.  I love to make up large batches of summer muesli, salsa with fresh cucumber + lemon basil pesto and store them in the fridge for a snack or quick meal.  

The beauty of this hot weather is that local farmers markets are still overflowing with gorgeous seasonal produce.  Bright red beautiful strawberries are in abundance and they're super sweet + juicy.




Luckily right now the mornings are still cool enough to bake!  Baking makes me happy … I love to see the excitement of Little Love or my husband when they come home to fresh baked treats. 

My husband and I love a good ole' summer pie, crisp or cobbler … there's just something so nostalgic about it.  I decided to surprise him after work with a strawberry crostata.  I wanted to make something that was refreshing + not too sweet … so I decided to add a layer of savory cream cheese and aromatic herbs like basil + mint.  The end result was unbelievable!  My husband said it's the best dessert I have ever made.

Rustic Strawberry Basil Crostata with Lemon Mint Cream Cheese 

Fresh juicy strawberries paired with strong aromatics of basil + subtle lemony mint cream cheese … this beautiful seasonal crostata will have your taste buds joyfully singing "Summer is here!"  


The buttery crust was inspired by Alice Waters' famous pie crust.  I grew up with my mom making this crust … she always used it to make her delicious apple pie.

Equipment: Food Processor fitted w/ "S" Metal Blade, Mixing Bowls, Cutting Board, Unbleached Parchment Paper, Rolling Pin

Ingredients


For the Pastry Crust


1/2 cup brown rice flour
1/2 cup white rice flour
1/4 cup arrowroot starch
1/8 cup tapioca flour
1/8 cup potato starch 
1/2 teaspoon xanthan gum*
3-4 tablespoons organic cane sugar or organic sucanat 
8 tablespoons very cold pasture butter, cut into 8 chunks {See Resources}
1 teaspoon organic apple cider vinegar 
1 teaspoon gluten free vanilla extract
Zest of 1 lemon {optional}
3-4 tablespoons ice cold filtered water

1 to 2 tablespoons melted pasture butter or organic cream {to brush on crust}
1 to 2 tablespoons organic cane sugar {to sprinkle on crust}

For the Strawberry Filling

4 cups organic strawberries, cut into large slices {about 1 1/2 pounds} 
3 tablespoons arrowroot starch or organic corn starch  
1/4 cup organic cane sugar or raw honey 
5 large fresh basil leaves, chiffonade {cut into thin ribbons}
2 tablespoons freshly squeezed lemon juice {the juice of about half a lemon}

For the Cream Cheese Filling 


3 tablespoons fresh mint, finely chopped  
Zest of 1 organic lemon
1 teaspoon freshly squeezed lemon juice 
8 ounces organic cream cheese
1 tablespoon raw honey

*** Advance Preparation Required: About 1 hour ***


Instructions


1. Add flours {dry ingredients}, organic cane sugar + lemon zest to the bowl of a food processor fitted with a "S" metal blade.  Pulse about 5 times to blend ingredients.  Add the cut up pieces of cold butter to the flour mixture.  Pulse about 10 to 15 times or until the butter is the size of peas.  With the motor running, add apple cider vinegar, vanilla extract and 3 tablespoons of ice cold water, 1 tablespoon at a time through the feed tube.  Turn off once the water is added and continue to pulse 3 to 5 times just to combine making sure to stop before the dough comes together {moist clumps should form}.  [Note: If the dough is too crumbly, you can add 1 more tablespoon of ice cold water and pulse 1 to 2 times just to combine.]  

2. Pour the dough onto a floured large piece {about 14 inches} of unbleached parchment paper.  Form the dough into a ball; flatten into a round disc.  Wrap the pastry dough disc in the same parchment paper and refrigerate for at least 1 hour.  [Note: Use either of the rice flours or arrowroot to flour the parchment paper.]

3. Make the cream cheese filling: In a mixing bowl, combine finely chopped mint, lemon zest, cream cheese + honey.  Stir to incorporate all ingredients.  Chill in the refrigerator for 1 hour to allow the flavors to incorporate. 

4. Preheat oven to 400 degrees F.  

5. Make the strawberry filling: In a large mixing bowl, add sliced strawberries, arrowroot, organic cane sugar or honey, basil chiffonade + lemon juice.  Gently stir to combine.  Set aside.  


6. Remove cream cheese filling from the refrigerator.  Set aside.      

7. Remove the chilled pasty dough from the refrigerator.  Remove pasty dough from parchment paper and place on a lightly floured large piece {about 14 inches} of unbleached parchment paper.  Place the used parchment paper on top of the pastry dough {this keeps the dough from sticking to the rolling pin + from falling apart}.  Using a rolling pin, roll the pasty dough into an 11 to 12" circle {it does not have to be a perfect circle, it should look rustic}.  Take care not to roll the pastry dough too much/too thin.  Carefully transfer pastry dough on the parchment paper to the baking sheet {do not remove pastry dough from parchment paper}. 

8. Using an offset spatula or knife, evenly spread the cream cheese filling over the middle of the pastry dough leaving about a 2" boarder of the outer crust.


9. Using a slotted spoon, scoop the strawberry filling {leaving reserved juice behind} on top of the cream cheese filling, making sure to leave about a 2" boarder of crust.    

10. Gently fold the boarder of the pasty dough over the fruit {about 1 1/2 to 2"}, forming an edge.  Don't panic if the dough breaks, just use your fingers to pinch the dough and seal up any tears or cracks.   

11. Pour reserved strawberry lemon juice over the fruit only.  


12. Brush edges of the crust with melted butter or cream and sprinkle organic cane sugar over the crust edges.


13. Bake the crostata for about 30 to 35 minutes, until the crust is light golden brown and the fruit is tender.  Let cool on the baking sheet for at least 20 minutes before serving.  I like to set the baking sheet on top of a wire cooling rack to cool quicker.  [Note: Make sure the crostata is cooled before cutting or the crust could crumble.  It's helpful to use a metal spatula or offset spatula to loosen the crostata from the parchment paper before cutting.

It's delicious served warm or at room temperature, but it's also perfectly delectable the next day after being chilled in the refrigerator. 

Yield: Makes 1 Crostata, about 8 servings. 

*Notes: I like to put the butter into the freezer the night before I make the crust.  This ensures the butter stays extra cold when it's time to make the pastry dough.  I have made this several times without the xanthan gum ... if you are uncomfortable using this, just omit. 

Tips: Cold ingredients are very important.  I store my flours in the freezer so they stay extra cold.  I also pour the measured vanilla extract and apple cider vinegar into a freezer-safe glass to chill a few minutes before I make the dough.  Keep the dough as cold as possible.  Make sure to keep the dough in the fridge when you're preparing the filling so the dough stays cold. 

Optional: When serving, garnish with extra basil chiffonade + lemon zest.

Serving Suggestions: Serve with honey vanilla ice cream, with homemade whipped cream or simply by itself.    

Storage: Store in the refrigerator.  This crostata does best if you serve it within a day or two.

Summer Pavlova with Homemade Lemon Curd + Strawberries {Gluten-Free + Dairy-Free}


Pavlova's are a must-have summer treat!  They look gorgeous + taste unbelievable too! 

If you've never had one of these delicate beauties, you are in for a real treat.  Pavlova's are a big delicious meringue ... crisp on the outside and soft and chewy on the inside.  

This is a show-stopper dessert, but the great part is that it's very simple + easy to make.  This is not a recipe that requires lots of baking skill or even a lot of hard prep time.


Pavlova's are one of my absolute favorite desserts.  Enjoy!


Summer Pavlova with Homemade Lemon Curd + Strawberries

Equipment: Food Processor, Large Baking Sheet, Unbleached Parchment PaperStanding Electric Mixer w/ Large Mixing Bowl or Electric Mixer w/ Large Mixing Bowl


INGREDIENTS

INSTRUCTIONS

1. To make the superfine sugar, place sugar into a food processor fitted with the steel "S" shaped blade and pulse until sugar becomes superfine, about 2 minutes.  [IMPORTANT NOTE: You will need more than 1 cup of sugar since the sugar reduces in volume during this process.  I place 2 cups of sugar into the food processor and store leftover superfine sugar in my pantry.  I use this organic sugar.

2. Preheat oven to 250 degrees F.  Use an 8-inch bowl or pan to trace two circles with a pencil on unbleached parchment paper.  Place the parchment paper, pencil side down, on a baking sheet.

3. Fit standing mixer with the whisk attachment.  Add egg whites to the mixing bowl.  Whisk the egg whites on medium-high for about 1 minute, until egg whites form firm peaks.  With the mixer still on medium-high, add the apple cider vinegar and cornstarch, beat for about 1 minute.  With the mixer on high, slowly add the sugar, beat for about 2 minutes, until shiny, stiff peaks form.  Turn mixer down to low and add vanilla at the end, just mix until incorporated.       



4. Divide the meringue mixture evenly between the two circles traced on the parchment paper.  Shape each mound of meringue into a circle, making the inside slightly indented, creating edges around the outside of the circle.  [Note: This does not need to be perfect, it is meant to be rustic.

5. Bake for about 1 hour and 30 minutes ... or until the meringue is glossy and has a crisp outer shell when touched gently [Note: Meringues are VERY delicate, if you touch it too hard, it will break.  If that happens, it's okay, just cover that area with lemon curd or fruit, no harm done.].  Meringue should be crisp on the outside and soft on the inside.  When the meringue is done cooking, turn off the oven and leave the meringue in the oven.  Allow to cool in the oven at least 2 hours before removing ... you can leave the meringue in the oven overnight to cool, or place it on a cooling rack after cooling in the oven for 2 hours.  

6. Meringue is ready to serve and be assembled with toppings once fully cooled, after at least 2 hours. 

7. TO SERVE: Gently spread a layer of homemade lemon curd over the center of both of the meringues.  At this point you can either stack one meringue on top of the other or leave them separate ... this is what I do since Little Love prefers hers without any lemon curd or berries.  Gently add sliced strawberries on top of the lemon curd {if you are stacking the meringues, add berries to the top layer only}.  Serve immediately.

Yield: Makes 2 meringue discs.  

Note: Pavlova's are very delicate.  Make sure not to add any toppings until you are ready to serve.  They do break easily, if that happens, just cover that area with lemon curd or fruit, they are meant to look rustic.

Homemade Maple Apple Chicken Breakfast Sausages


Breakfast Sausages are really easy to make and so much healthier than store-bought versions.  The flavor ... oh my, they're so incredibly delicious, better than any sausages I've had in restaurants.  

Make up a batch of these on the weekend for a special breakfast or to go along with pancakes or french toast.  Or better yet, make a couple batches of these on the weekend so you'll have a high protein meal or snack that you can quickly heat up during the week.    

Homemade Maple Apple Chicken Breakfast Sausages

Equipment: Cutting Board, Knife, Microplane Grater (optional), Large Mixing Bowl, Large Plate (optional), Large Saucepan or Skillet
  • 1-2 tablespoons pasture butter, ghee or fat of choice (See Resources)
  • 2-4 tablespoons broth, bone broth or filtered water
1. Prep garlic and apple - peel and grate or finely mince garlic; peel and finely dice apple.  

2. In a large mixing bowl, combine ground chicken, breakfast sausage seasoning, grated garlic, maple syrup and diced apple.  Using clean hands, mix well to incorporate.



3. Shape into small patties - not too big, not too small, and place onto large plate (just until you're ready to cook them all).  

4. Get your large pan or skillet ready - melt fat of choice of medium heat.  Pan should preheat about 1-2 minutes before you cook the sausages.

5. Fry the patties in the preheated pan/skillet on each side until golden brown on both sides and completely cooked in the middle.  This will take about 12-15 minutes depending on the thickness of the sausages and the heat of your pan.  Tip: You do not want them to burn, so do not cook over high heat.  When I flip them halfway through the cooking process, I add broth to the pan (tablespoons at a time).  This helps them brown nicely so they do not stick or burn.  I also find that it keeps them moist, not dried out like many sausages can get if not cooked properly.  [Note: Do not crowd the patties, cook in batches if you need to.  They cook best if there is space between them.]         


Yield: About 4-5 servings {approx. 15+ small sausages}

Storage: Store in an airtight container in the refrigerator for up to 3 days.  Or freeze cooked sausages in freezer safe containers for later use.


Reheating Instructions: Reheat in the oven on a warming tray (I use a stoneware baking dish).  Make sure to keep the oven on a low setting (warm - 250 degrees F).  They don't take long to heat, about 5-10 minutes depending on the size of the sausage.

Recipe can easily be doubled.

Homemade Breakfast Sausage Seasoning


This blend of spices makes some of the yummiest breakfast sausages ever.  It's so simple to make, why not make your own?

Mix up a batch of this and keep it on hand for weekend breakfast sausages {or make up a batch of breakfast sausages on the weekend so you have already prepared sausages for breakfast during the week}.


Homemade Breakfast Sausage Seasoning

Equipment: Small Bowl, Measuring Spoons, Optional Spice/Coffee Grinder

Option #1 {Rustic/My Preference}: Mix all ingredients in a small bowl.

Option #2 {Finely Ground/Powder}: Place all ingredients in a spice/coffee grinder and pulse until fine consistency.    


Yield: 1 serving per pound of ground meat

Storage: For longest shelf life, store in a glass airtight container.  

Note: I do not use garlic in the seasoning blend.  Instead I add fresh garlic to the sausage mixture.

Homemade Chocolate Pudding {Gluten Free, Refined Sugar Free + Vegan Option}


This old fashioned comfort food may be one of my favorite desserts ever.  Seriously, this stuff is amazing ... THE best chocolate pudding I have ever tasted.  I made a batch of this and it did not last long, Big Love and I devoured it.

Homemade Chocolate Pudding {Gluten Free + Refined Sugar Free}

Equipment: Small Bowl, Medium-Size Saucepan, Whisk, Serving Dish or Individual Dishes

*** Refrigeration Time Required ***

1. In a small bowl combine arrowroot starch and 2 tablespoons of coconut milk or milk.  Stir until combined and set aside.  

2. Combine remaining coconut milk or milk, chocolate chips, coconut palm sugar, cacao powder and salt in a medium-size saucepan.  Over medium-low heat, whisk constantly until all the chocolate has melted and the mixture is smooth.  Remove from heat for about 3-5 minutes.  

3. Add arrowroot mixture to the chocolate mixture, whisking to combine.  Return saucepan to LOW heat and stir/whisk as you cook the pudding for about 5 minutes {about 8 minutes if using corn starch}, or until it starts to slightly thicken and looks deliciously glossy [Note: The pudding will not be super thick if using arrowroot].   

4. Remove from heat and stir in the vanilla extract.

5. Pour pudding into serving dish or little individual dishes like ramekins.  

6. Chill in the refrigerator for at least 4 hours, overnight is best.  



Yield: About 4 servings 

Storage: Store in an airtight container in the refrigerator for up to 3 days, but trust me, it will be gone before 3 days.  

Serving Suggestions: Enjoy as is or top with fresh fruit, shaved chocolate, fresh REAL whipped cream or whipped coconut cream. 

Vegan Option: Use coconut milk instead of whole milk.  

Arrowroot Starch Note: If arrowroot starch is overcooked or exposed to heat for too long, it tends to loose it's thickening ability.  To avoid this, it's important to cook the pudding quickly and not over high heat.  If the pudding does not thicken after 5 minutes, remove from the heat and add an additional 2-3 tablespoons of arrowroot starch.  Stir until the arrowroot is completely mixed into the pudding.  If this is a concern, use organic corn starch instead.  

*For California residents, check out my favorite raw milk/cream from Claravale Farm.  They sell to stores and co-ops all over CA.  If you can’t find raw, at least buy a quality organic product like Straus Family Creamery.  Their cows graze on lush grass in Marshall, CA near Tomales Bay and they do not ultra-pasteurize their products.

Nectarine + Peach + Nectaplum Crumble (Gluten-Free, Nut-Free & Refined Sugar-Free)


Seasonal Crumbles are one of my favorite treats during the summer.  Fresh, juicy, mouth-watering fruit baked with a delicious, sweet, crumbly topping ... yum!

Use whatever stone fruit is in season - white or yellow nectarines and peaches, plums, pluots, apricots, etc.  Nectaplums are one of my favorite summertime fruits, but they're not available everywhere.  I'm sure some fresh berries would be wonderful added in too.    



Nectarine + Peach + Nectaplum Crumble (Gluten-Free, Nut-Free & Refined Sugar-Free)

Equipment: Cutting Board, Paring Knife, Medium-Size Baking Dish (I use my 2 1/2 qt. Corningware Baking Dish), Medium-Size Bowl

  • 5 white nectarines, peeled, pitted and sliced
  • 3 white peaches, peeled, pitted and sliced
  • 2 nectaplums, peeled, pitted and sliced
  • 1 1/2 cups sprouted brown rice flour or brown rice flour (See Resources)
  • 3/4 cup coconut palm sugar (I use Big Tree Farms SweetTree
  • 6 tablespoons pasture butter, cut into tablespoons (See Resources)
1. Preheat oven to 375 degrees F.  Lightly grease baking dish.  

2. Prep fruit - wash, cut in half, peel, remove pit, and cut into thirds (or large slices).  Add fruit slices to baking dish.  Mix around with clean hands so fruit is evenly distrubted.  



3. In medium-size bowl, add brown rice flour, coconut palm sugar and chunks of butter.  Using clean hands, mix ingredients together until combined and somewhat crumbly.  

4. Add crumble topping on top of the fruit, making sure to evenly coat the surface. 

5. Bake for about 30-45 minutes, or until top is golden brown and fruit juices are bubbling around the edges.   

6. Enjoy warm or refrigerate and eat cold later.  




Yield: About 6 servings

Serving Suggestions: This is delicious served with vanilla ice cream (dairy or coconut milk).

Chocolate Chip Cookies (Gluten Free & Nut Free)




Delicious, crisp on the outside, soft in the center … yummy, yummy, chocolate chip cookies.  Even my non-gluten free husband loves these.   


Chocolate Chip Cookies (Gluten Free & Nut Free)

Equipment: Standing Electric Mixer or Handheld Electric Mixer w/ Large Bowl, Spatula or Spoon, Baking Sheet, Unbleached Parchment Paper

·      ¾ cup coconut palm sugar (I use Big Tree Farms SweetTree)
·      ¾ cup rapadura (I use Rapunzel)
·      1 cup pasture butter, room temperature (See Resources)
·      1 pastured or organic egg
·      1 teaspoon gluten free vanilla extract (I use Simply Organic)
·      2 ½ cups sprouted brown rice flour or brown rice flour (See Resources)
·      1 teaspoon baking soda
·      1 ½ - 2 cups gluten free chocolate chips (I use Enjoy Life)

1.    Preheat oven to 375 degrees F.  Line baking sheet with parchment paper.

2.   Assemble standing mixer with large mixing bowl and mixing blade.  Add coconut sugar, rapadura and pasture butter – cream/mix on medium speed until mixture is combined and smooth, about 1-2 minutes.   

3.   Add egg and vanilla, mix on low speed just to combine.

4.   Add brown rice flour and baking soda, mix on low speed until combined. 

5.    Add chocolate chips, mix on low speed or stir by hand until combined. 

6.   Using clean hands, roll dough into 2-inch large balls.  Place on baking sheet 2 ½ inches apart. 


7.    Bake for about 12 minutes.  Do not over bake!

8.   Remove from oven and let cool ON baking sheet for 7-10 minutes.  Do not remove them before this or they will fall apart.  They need time to rest. 

9.   Remove carefully to a cooling rack or let cool completely on baking sheet.  Enjoy them warm or let them cool completely. 


Yield:Makes about 15-20 cookies

Note: I have also used ½ cup local creamed clover honey and ¾ cup coconut sugar combo instead of Rapadura.  They’re still yummy, but it changes the texture a lot, Little Love prefers this version.  These can also be made with good quality chocolate bars chopped up instead of chocolate chips. 

Storage:Store in airtight container up to 3 days if you haven’t eaten all of them already.  I like mine cold the next day, so I store some of mine in the refrigerator, this is totally optional.
