Chicken Thyme and Lentil Soup
Chicken Thyme and Lentil Soup - a hearty yet healthy soup that makes the most of leftover roast chicken.

Ingredients
- 1 1/2 cups diced carrots
- 1 cup diced parnsip
- 1 medium red onion
- 3 cloves garlic
- 4 tbsp olive oil
- 1/2 tsp black pepper
- large pinch salt
- 6-8 cups low sodium chicken stock
- 4-6 sprigs fresh thyme
- 2 bay leaves
- 1/2 cup green lentils green lentils
- 2 - 3 cups diced fully cooked chicken, grilled or roasted
- Heat olive oil in a large saucepan. Add the onions, garlic, carrots, parsnip, salt and pepper and saute together until the onions begin to soften.
- Add the chicken stock, thyme, bay leaves and lentils.
- Simmer for about 20 minutes or until the lentils are almost cooked.
- Add the cooked chicken and taste, seasoning with salt and pepper if necessary.
- Simmer for only an additional 10 minutes before serving.
