One of our regular readers provided the inspiration for this sinful cheesecake. She had taken our recipe for Chocolate Chip Cookie Dough Cheesecake Bars and turned it into an actual cheesecake by doubling the recipe and putting it into a spring form pan.

I thought perhaps the cheesecake from that recipe might be a bit dense for that purpose so I set out to see if it would work with a creamier cheesecake recipe. I did cut back a little on the whipping cream that I normally put into a cheesecake to make it a little thicker to hold the cookie dough better and it worked very well.

The cookie dough in this recipe is the same as used in those decadent cheesecake cookie bars. It should be should be very cold when it's folded into the cheesecake batter so be sure to make it an hour or more in advance of the rest of the recipe.

Cookie Dough

Cream together very well:

  • 1/2 cup butter
  • 1/3 cup white sugar
  • 1/3 cup dark brown sugar
  • 1 1/2 tsp vanilla extract
Fold in just until a dough forms:
  • 1 cup plus 2 tbsp flour
  • pinch salt
Finally mix in:
  • 1 cup chocolate chips
Chill the dough in the fridge for at least an hour.

Break off small nuggets of the dough about the size of the top of your forefinger. Place them on a parchment lined tray and keep chilled in the fridge. About 3/4 of these dough nuggets will go into the cheesecake batter. Reserve the other 1/4 to garnish the cheesecake after it is baked, cooled and glazed.

  
Cookie Crumb Crust

In a small bowl, combine:


  • 1 1/3 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1/3 cup melted butter
Press into the bottom of a lightly greased or parchment lined 9 inch spring form pan. (Grease bottom only!) Parchment paper is ideal here because it makes it very easy to release the cheesecake from the bottom of the pan.

Vanilla Cheesecake


Cream together:


  • 2 eight ounce packages ounces cream cheese
  • 2/3 cup sugar
Add, one at a time

  •  2 eggs

beating well after each addition. Add

  •  2 tsp vanilla extract

Finally blend in

  • 1/2 cup whipping cream
Fold in 3/4 of the chilled cookie dough pieces. Pour over the prepared base and bake at 300 degrees F for 60 - 70 minutes. The cheesecake does not have to brown at all in order to be fully baked; the surface of the cheesecake should lose any shine when the cake is properly baked. It can still be slightly wobbly just at the center at this point.

Remove the cake from the oven and run a sharp knife completely around the edge of the pan. This will allow for the cheesecake to shrink as it cools and hopefully not crack (Allow the cheesecake to cool thoroughly on a wire rack at room temperature. (NOT in the fridge). Refrigerate after fully cooled.


Top with chocolate ganache and vanilla whipped cream as well as the reserved cookie dough pieces.

Chocolate Ganache

In a small saucepan, heat almost to boiling:

  • 1/3 cup whipping cream

Remove from heat and pour in

  • 1 1/3 cups chocolate chips

Let stand for 5 minutes, then stir until smooth. Pour evenly over the cheesecake when it is still in the pan. Return to the fridge to let the chocolate set.

Vanilla Whipped Cream
  • 1 cup whipping cream
  • 3 rounded tbsp icing sugar (powdered sugar)
  • 1 tsp pure vanilla extract
Beat to firm peaks and use to garnish the edges of the cheesecake. If you don't have a piping bag just cut a half inch opening off the corner of a large Ziploc bag and use that to squeeze the whipped cream onto the cheesecake.

Ultimate Lemon Mousse Cheesecake
If you are a cheesecake lover and a lemon lover, this is your ultimate dessert. I started with a simple, buttery, lemon shortbread cookie base and topped it with a creamy lemon cheesecake where whipped cream gets beaten to soft peaks before being folded into the cheesecake batter. A tart and sweet homemade lemon curd tops it all of before being garnished with candied lemon zest; truly a the ultimate tart and sweet, lemon lovers dream dessert.

A word about baking a cheesecake in a bain marie before starting the recipe. A bain marie is simply a water bath that buffers the direct heat from the sides and bottom of the baking pan to more evenly bake the cheesecake from the sides to the center.

I bake my cheesecakes in a 9 or 10 inch spring form pan that has the bottom and sides wrapped in multiple layers of wide heavy duty aluminum foil which forms a sort of boat that the cheesecake pan sits in. The roll of aluminum foil that I use is about 16 inches wide. I use at least 4 layers of foil to make sure that no water leaks in and ruins the crust of my cheesecake. The aluminum foil wrapped pan is then placed inside a larger baking pan; I use a 12 inch cake pan. Boiling water is then poured into the larger pan filling it from 1/2 to 2/3 of the way to the top.

I find it best to pour the boiling water into the pan after it is placed on the rack in the oven as you are less likely to splash water onto the cheesecake or inside the aluminum foil. I reuse the aluminum foil for several future cheesecakes, adding a couple of layers to it each time just to be safe.

Even if you choose not to use the bain marie method, wrapping the spring form pan with a few layers of foil, really helps to buffer the heat and help the cheesecake bake more evenly.

For the lemon cookie base. (A graham wafer crumb base is easily substituted if you prefer.)

  • 1 cup flour
  • 1/2 cup icing sugar (powdered sugar)
  • small pinch salt
  • 1/2 cup cold butter, cut in cubes
  • 1 tsp lemon extract
  • 1 large egg yolk
  • 1 tsp lemon zest , finely minced

Sift together the flour, icing sugar and salt. Mix in the lemon zest . Set aside.

Rub the butter into the dry ingredients with your fingers until it is well incorporated and the mixture becomes crumbly, like a coarse meal

Whisk together the egg yolk and lemon extract Add to the crumbly dry mixture and mix in until a soft dough forms.

Wrap the dough in plastic wrap and chill in the fridge for at least a half hour.

Press evenly into the bottom of a parchment paper lined 9 or 10 inch spring form pan. Dipping your fingers into flour helps if the dough is too sticky. Bake at 350 degrees F for 25-30 minutes. Let cool for 15-20 minutes before adding the cheesecake batter.

Lemon mousse cheesecake batter

Cream together:
  • 3 eight ounce packages ounces cream cheese
  • 1 cup sugar

Add, one at a time
  • 3 eggs

beating well after each addition. Add
  • 1 tsp vanilla extract
  • 1 tsp lemon extract

Finally blend in
  • 1 cup whipping cream, whipped to soft peaks
  • zest of one large lemon, finely minced

Pour over the prepared and cooled base and bake in a bain marie at 300 degrees F for about 1 hour  and 15 minutes. The cheesecake does not have to brown at all in order to be fully baked; the surface of the cheesecake should lose any shine when the cake is properly baked. It can still be slightly wobbly just at the center at this point.

Remove the cake from the oven and run a sharp knife completely around the edge of the pan. This will allow for the cheesecake to shrink as it cools and hopefully not crack (but who cares if it does? I am never bothered by a crack or two in the surface) Allow the cheesecake to cool thoroughly on a wire rack at room temperature for an hour or so before cooling it completely for a few hours or overnight in the fridge. 

Lemon Curd

In a small saucepan combine:

  • 4 lightly beaten egg yolks
  • 2/3 cup sugar
  • 1/3 cup fresh lemon juice
  • zest of half a lemon, finely minced
  • 1/3 cup butter cut into small pieces

Cook all ingredients except butter together slowly over medium low heat for about 10 minutes stirring constantly until the mixture thickens enough to coat the back of a wooden spoon. Remove from heat and stir in the butter a few pieces at a time until completely smooth. Cover with plastic wrap and chill completely in the fridge. Spread evenly on top of the chilled cheesecake and garnish with candied lemon zest.

Candied lemon zest

  • 1 cup sugar
  • 2/3 cup water
  • zest and juice of one large lemon 
  • additional sugar (about a cup)

Remove the zest of the lemon in large pieces using a sharp vegetable peeler. You want to avoid using too much of the pithy white layer.

Add tot he saucepan along with the 1 cup of sugar,  water and lemon juice.  Simmer very slowly for 15 minutes, then remove the candied zest from the syrup and let it drain on a wire rack.

When drained cut it into thin strips and toss it in the additional sugar. Let sit for a half hour or longer before using as a garnish.

Note: This candied zest can be stored in the sugar for several weeks in a mason jar. 

Don't throw out the sugar. Use it to make lemon shortbread cookies or when making lemon pound cake. 

The syrup can also be stored for a couple of weeks. Use it to brush on a lemon pound cake or even as a delicious substitute for maple syrup on blueberry pancakes.

Sometimes friends and family get Christmas Day dessert as a gift from our family on Christmas Eve. It has been a bit of a tradition at our house for the past few years. Putting too many on that list can turn into a logistical nightmare so a selection of the bounty from our annual November freezer cookie blitz is now most often what this lucky list now receives.

Invitations to parties and pot lucks however, still have us taking along a decadent dessert to grace the table and this year this particular cheesecake was a huge hit at several venues. The inspiration comes from homemade rum truffles that I sometimes make and once dipped fresh strawberries into to adorn the top of my very popular Strawberry Screech Black Forest Cake. Everyone loves that flavor combination so this new cheesecake was the result and another new dessert favorite was born.



Strawberry Compote Topping

  • 2 cups fresh or frozen strawberries
  • 1/2 cup sugar
Combine in a saucepan and bring to a very gentle boil. Thicken with 
  • 1 1/2 tbsp corn starch dissolved in 
  • ¼ cup cold water
which is added to the strawberries while stirring gently. Boil gently for 1 additional minute, stirring constantly. Cool completely for several hours in the fridge.

Cookie Crumb Crust

Rum Truffle Ganache 


The rum truffle ganache is used to cover the cheesecake and to dip the strawberries.
  • 2 cups dark chocolate chips (or semisweet)
  • 1/2 cup whipping cream
  • 3 tbsp dark rum, optional (or 1 tsp rum extract) 
Melt together, just until smooth in a double boiler. Do not over heat. Just as it is melted remove from the heat. Dip in:
  • 10 -12 large strawberries
Place the dipped strawberries on a piece of parchment paper or wax paper and chill until ready to garnish. Pour the remaining ganache over the chilled cheesecake and spread very quickly and evenly over the top and sides with a flat spatula. Return the cheesecake to the fridge to chill again.

Vanilla Whipped Cream
  • 2 cups whipping cream
  • 3  rounded tbsp icing sugar (ie powdered sugar, confectioners sugar)
  • 1 tsp vanilla extract
Combine and whip until stiff mounds form. Using a piping bag (or a large Ziploc bag with the corner snipped off) pipe mounds of the vanilla whipped cream all around the border of the cheesecake, to form a sort of well for the strawberry topping. Spoon the Strawberry Compote Topping onto the center of the cheesecake and garnish with the chilled dipped strawberries. Refrigerate until ready to serve.

Here's the latest in my flavor experiments with one of my favorite freezer-friendly cookie bar recipes. Apricot and orange is a great flavor combination and go deliciously hand in hand in these buttery cheesecake squares.


Apricot Orange Cheesecake Bars

Apricot Orange Cheesecake Bars - a freezer friendly recipe with the delicious combination of dried apricots in a citrus flavored cheesecake surrounded by buttery shortbread crumble.

Prep time: 20 minutes
Cook time: 35 minutes
Total time: About 1 hour
Yield: 24 cookie bars
Ingredients
  • 1 cup flour
  • 1/4 cup sugar
  • 1/3 cup + 1 tbsp cold butter
  • 1 tsp vanilla extract 
  • FOR THE CHEESECAKE FILLING
  • 1 cup (8 ounces) cream cheese
  • 1/2 cup sugar 
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 large egg
  • 2 tsp grated orange zest, finely minced 
  • 3/4 cup chopped dried apricots
Directions
  1. In a food processor pulse together the flour, vanilla, sugar and butter until crumbly (or simply cut the butter through the flour and sugar with a pastry knife or two butter knives held between your fingers)
  2. Save a 1/2 cup of this crumble mixture to sprinkle over the top later.
  3. Press the rest of the crumble mixture into the bottom of a greased or parchment lined 9x9 inch square baking pan.
  4. Bake at 350 degrees F for 15 minutes. Remove from oven and let cool for a few minutes while preparing the cheesecake filling.
  5. Beat together the cream cheese, white sugar, lemon juice and vanilla extract until smooth.
  6. Beat in the egg and orange zest.
  7. Fold in the chopped apricots.
  8. Spread the cheesecake mixture evenly onto the pre-baked cookie base and sprinkle the reserved cookie crumble over the surface.
  9. Bake at 325 degrees F for 20 minutes. Let cool completely in the pan before cutting and serving.
  10. Refrigerate in airtight containers. Freezes well too.

One great recipe can sometimes inspire another. We have had a few cheesecake cookie bars featured over the past few years and I particularly like the ones that combine a shortbread like base and crumble topping. With the success of a recent chocolate shortbread recipe experiment, I decided that a cherry cheesecake version of these cookie bars could work well. I drizzled them with a little chocolate for presentation purposes only, they certainly don't need it, so omit it if you prefer. This type of cheesecake square, like the others here at Rock Recipes, freezes quite well making them an excellent choice for early, pre-holiday baking. This batch went very quickly into my freezer after I sampled one...so lusciously delicious!



Chocolate Cherry Cheesecake Bars

Chocolate Cherry Cheesecake Bars - a scrumptious mix of chocolate shortbread crumble, creamy vanilla cheesecake and juicy cherries. Throw on a little chocolate drizzle too if you like.

Prep time: 25 minutes
Cook time: Aproximately 60 minutes
Total time: About 1 1/2 hours
Yield: About 3 dozen cookie bars. 

Ingredients
  • 3 cup flour
  • 2/3 cup cocoa
  • 3/4 cup firmly packed brown sugar
  • 1 1/2 cup cold butter
  • FOR THE CHEESECAKE FILLING
  • 2 cup (1 pound) cream cheese
  • 1 cup white sugar 
  • 2 tbsp vanilla extract
  • 2 tbsp lemon juice
  • 2 large eggs
  • 1 1/3 cups fresh or frozen cherries, quartered
  • FOR THE CHOCOLATE DRIZZLE (Optional)
  • 1/2 cup chocolate chips
  • 2 tbsp whipping cream
Directions
  1. In a food processor, pulse together the flour, brown sugar, cocoa and butter until crumbly (or simply cut the butter through the flour,cocoa and sugar with a pastry knife or two butter knives held between your fingers)
  2. Save a 1 cup of this crumble mixture to sprinkle over the top later.
  3. Press the rest of the crumble mixture into the bottom of a greased or parchment lined 9x13 inch rectangular baking pan.
  4. Bake at 350 degrees F for 25 minutes. Remove from oven and let cool for a few minutes while preparing the cheesecake filling.
  5. Beat together the cream cheese, white sugar, lemon juice and vanilla extract until smooth.
  6. Beat in the egg.
  7. Spread the cheesecake mixture evenly onto the pre-baked cookie base.
  8. Sprinkle the chopped cherries evenly over the cheesecake batter.
  9. Press together the the reserved cookie crumble in your fist, break off small pieces and sprinkle over the surface.
  10. Bake at 325 degrees F for 35 to 40 minutes or until the cheesecake is set at the center.
  11. Let cool completely in the pan before cutting and serving.
  12. You can drizzle the squares with chocolate too id f you like. Just melt together the chocolate chips and whipping cream in a double boiler. Spoon into a piping bag (or Ziploc bag with the corner snipped off) and drizzle a thin stream over each cookie bar.
  13. Refrigerate in airtight containers. Freezes well too.

    Regular readers know that I think fruitcake gets a bad rap at the Holidays and many more fruitcake lovers are coming out of the closet to celebrate their love of the annual festive treat. In an effort to convert even more to the festive flavors of spice and sweet dried fruits, I've come up with a new way to tempt even more... add a cheesecake element!

    With the fragrance of Christmas spices in the buttery crumble and dried glace fruits in the cheesecake, I'm guessing more than one fruitcake nay-sayer will try and sample one of these if offered during the Holiday season. Add this recipe to your Holiday freezer baking list and see if you can't find a few to tempt.

    Fruitcake Cheesecake Bars

    Fruitcake Cheesecake Bars - a very festive and easy cookie bar recipe with a spiced butter crumble surrounding a dried fruit cheesecake center.

    • 1 large egg
    • 2/3 cup mixed glace fruit

    I'm probably not the only one who's noticed a resurgence in the popularity of pumpkin recipes in the last couple of years. Fans of good old pumpkin pie seem to be growing exponentially and the flavor combination of pumpkin and fragrant spices has found its way into more and more dessert recipes. Pumpkin in particular seems to be the most popular Autumn flavor for cheesecake and in today's recipe I've decided to use it in one of my favorite ways, a cheesecake dessert bar.

    Making an entire cheesecake is very often overkill because, unless you are serving about 16 people, you are going to have a lot of leftover dessert...and we all know what that means for trips to the fridge in the following couple of days. Making cheesecake bars is a terrific way to make a much smaller dessert and is far easier to portion control as well. When a dessert is as rich as cheesecake, a little goes a long way anyway so why not enjoy it in a more manageable serving size.

    It was Spouse's idea to use gingersnap crumbs for the crust , which isn't surprising considering her love of anything ginger. I love the combination of chocolate and gingerbread, so it was my idea to drizzle a little of it on top of the bars. This is of course, optional; the bars are perfectly delicious without it and if you are not fond of gingersnaps, a standard graham crumb crust is easily substituted.

    The fact that these are very freezer-friendly is an additional bonus in that you can pull out just a few at a time and let them thaw for 20-30 minutes at room temperature before serving. Just the perfect thing for last minute guests or entertaining during the Holidays.

    Ingredients
    • 1 1/2 cups gingersnap cookie crumbs
    • 1/3 cup melted butter
    • 3 tbsp sugar
    • 8 oz cream cheese
    • 1/3 cup sugar
    • 1 tsp vanilla extract
    • 1 egg
    • 1/3 cup sour cream
    • 1/2 cup pumpkin puree
    • 1 tsp cinnamon
    • 1/2 tsp allspice
    • pinch ground cloves
    • pinch ground nutmeg
    Directions
    1. Mix together the gingersnap crumbs melted butter and 3 tbsp sugar.
    2. Press firmly into the bottom of the parchment lined 9x9 inch baking pan. Bake at 350 degrees F for 10 minutes.
    3. Cream together the cream cheese, 1/3 cup sugar, vanilla extract and pumpkin puree until smooth.
    4. Beat in the egg.
    5. Beat in the sour cream and spices.
    6. Pour over the prepared crust and bake for 25-35 minutes at 300 degrees F until the center sets and no longer jiggles.
    7. To ensure even baking you can place the baking pan into a larger baking pan and fill half way up with boiling water. This may slow down the cooking process and require a little extra baking time but the cheesecake will bake more evenly from the edges to the center.
    8. Cool completely before cutting into bars and serving. Store in the refrigerator or freeze until needed.
    9. I either pre-cut them into bars and freeze them in airtight containers with each one nestled inside a paper muffin tin liner to easily pluck out as many as you need to thaw at a time. I also freeze an entire batch, uncut, in case I need larger servings to serve as a decadent dessert for unexpected dinner guests.
    10. If you want to drizzle them with chocolate, just melt together 1/2 cup chocolate chips with a couple of tablespoons of whipping cream in a double boiler or in the microwave. This can be done before freezing or when you serve them.

      I've tried a few brownie cheesecakes in my day and experimented with making several. Sometimes with a brownie base, sometimes with chunks of brownie baked into the cheesecake itself. My final version of this recipe settled on a chocolate cookie crumb base, to add a little crunch to this cheesecake. 

      I chose to bake little bite size brownies to top the cake in order to preserve their chewy, fudgy texture. I found baking them into the cheesecake resulted in them only sinking to the bottom anyway and I like this presentation much better. The creaminess of a perfectly baked cheesecake is also maintained and the mix of textures and flavors is simply outstanding in this amazing dessert.
      A word about baking a cheesecake in a bain marie before starting the recipe. A bain marie is simply a water bath that buffers the direct heat from the sides and bottom of the baking pan to more evenly bake the cheesecake from the sides to the center.

      I bake my cheesecakes in a 9 inch springform pan that has the bottom and sides wrapped in multiple layers of wide heavy duty aluminum foil which forms a sort of boat that the cheesecake pan sits in. The roll of aluminum foil that I use is about 16 inches wide. I use at least 4 layers of foil to make sure that no water leaks in and ruins the crust of my cheesecake. The aluminum foil wrapped pan is then placed inside a larger baking pan; I use a 12 inch cake pan. Boiling water is then poured into the larger pan filling it from 1/2 to 2/3 of the way to the top.

      I find it best to pour the boiling water into the pan after it is placed on the rack in the oven as you are less likely to splash water onto the cheesecake or inside the aluminum foil. I reuse the aluminum foil for several future cheesecakes, adding a couple of layers to it each time just to be safe.

      Brownie Cheesecake
      Cheesecake

      In a small bowl, combine:
      • 1 1/3 cups chocolate cookie crumbs
      • 3 tbsp sugar
      • 1/3 cup melted butter

      Press into the bottom of a lightly greased or parchment lined 9 inch springform pan. (Grease bottom only!) Parchment paper is ideal here because it makes it very easy to release the cheesecake from the bottom of the pan.

      Cream together:

      • 3 eight ounce packages ounces cream cheese
      • 1 cup sugar

      Add, one at a time
      • 3 eggs

      beating well after each addition. Add

      • 3 tsp vanilla extract

      Finally blend in
      • 1 cup whipping cream

      Pour over the prepared base and bake in a bain marie at 300 degrees F for 60 minutes to 70 minutes. The cheesecake does not have to brown at all in order to be fully baked; the surface of the cheesecake should lose any shine when the cake is properly baked. It can still be slightly wobbly just at the center at this point.

      Remove the cake from the oven and run a sharp knife completely around the edge of the pan. This will allow for the cheesecake to shrink as it cools and hopefully not crack (but who cares if it does? I am never bothered by a crack or two in the surface) Allow the cheesecake to cool thoroughly on a wire rack at room temperature. (NOT in the fridge). Refrigerate after fully cooled.
      Top with the mini brownies and drizzle with chocolate ganache before serving. 
      Mini Brownies
      • 1/3 cup plus one rounded tablespoon of flour
      • 2 tablespoon cocoa powder
      • pinch salt
      • 1/4 cup butter
      • 2 1/2 squares unsweetened chocolate
      • 1/3 cup plus one rounded tablespoon of granulated sugar
      • 2 rounded tbsp light-brown sugar
      • 1 extra large egg
      • 1teaspoon vanilla extract

      Sift together flour, cocoa and salt. Melt together butter and unsweetened chocolate over low heat. Remove from heat
      and cool to lukewarm. Add egg, vanilla and sugars. Stir very well until sugars are almost dissolved.

      Gently fold in dry ingredients.

      Pour batter into a 8 inch square baking pan that has been greased
      and lined with parchment paper. Bake for about 15-18 minutes at 325 degrees F or until the surface of the center of the brownies appears dry and firm. Toothpick test will not work for this recipe but it will tell you if the middle is still liquid. Do not over bake these brownies or they will be dry rather than moist and chewy. Cool completely before cutting into 1/2 inch squares.


      • Chocolate Ganache

      In a double boiler, melt together 


      • 1 ounce whipping cream
      • 1/2 cup chocolate chips

       Drizzle over the brownies and cheesecake.

      Does this beautiful scone look familiar? Regular readers will recognize it as a very popular recipe from last month. I actually made this batch of beautiful scones back on May 12, a full 4 weeks ago!

      When I first made this batch I thought the result was excellent but had to admit that they did take a bit of effort to accomplish because of the necessity to bake and freeze the cheesecake component a day in advance. With all that effort going in, I thought it was a bit of a shame that their enjoyment would be so fleeting so I decided to experiment with freezing half the batch to bake later. Boy, was I glad I did! I woke early this morning and placed the scones on  a parchment lined baking sheet and let them thaw for about 30 minutes before popping them into a 400 degree hot oven for about 25 minutes. I think letting them that in the fridge overnight would also work very well.

      The result of this little experiment was outstanding! I don't know that I would be able to tell the difference between a freshly made batch and those baked from frozen. From now on I will be routinely freezing scones and maybe making double batches to enjoy several weeks down the road. So if you are trying to plan a brunch in advance, need just a few for your small family or yourself, or just would like to have fresh scones for weeks with practically no extra effort every weekend, this idea will be right up your alley. 

      Heck, forget weekends, I think these would make Monday mornings much more tolerable! :)

      Raspberry Swirl Cheesecake Shortcake


      We were celebrating the birthday of a friend recently and I wanted to include two favorite things in an idea for a new cake recipe; raspberries and cheesecake. I've made cakes with a cheesecake filling before but this time I wanted to keep it a little simpler and decided on a shortcake version of the same idea with an uncomplicated finish of vanilla whipped cream. The result was very delicious indeed and a big hit at the birthday celebration.

      Vanilla Cake Base

      Sift together and set aside:

      2 1/2 cups cake flour
      3 tsp baking powder

      In the bowl of a stand mixer with the whisk attachment in place, whisk together on high speed until foamy and slightly stiffened.

      3 eggs
      1 1/4 cups sugar
      2 tsp vanilla extract

      Mix together in a measuring cup with a spout:

      1/4 cup melted butter
      1/4 cup vegetable oil

      Slowly add the oil and butter mixture to the egg mixture in a slow stream as the mixer continues to whisk.

      Mix together
      1/2 cup whipping cream
      1/2 cup milk
      2 tbsp lemon juice

      Add slowly to the mixing bowl continuing to mix but at a reduced speed.

      Fold in the dry ingredients by hand with a rubber spatula until smooth.
      Pour into a 10 inch pan and bake for 30 – 40 minutes or until a wooden toothpick inserted in the center comes out clean. Rest the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.

      Raspberry Swirl Cheesecake Layer
      1 cup raspberries
      1/4 cup sugar
      4 tbsp water

      Bring to a gentle boil and thicken with a slurry made by mixing together

      1 rounded tablespoon corn starch
      2-3 tbsp water

      Boil only for an additional half minute or so, stirring constantly until the mixture completely thickens. Set aside to cool.

      Beat together until smooth:

      1 ½ pounds cream cheese
      1 cup sugar
      2 tsp vanilla extract

      Add, one at a time:

      3 eggs

      Beat well after each added egg. Blend in

      ½ cup whipping cream
      Stir in
      ½ cup raspberry puree (I press raspberries through a sieve to remove the seeds)

      Pour into a 10 inch ungreased springform pan that has the bottom lined with parchment paper.

      Drop tablespoonfuls of the raspberry compote, evenly spaced apart, onto the cheesecake batter. Using the handle of a wooden spoon, swirl the raspberry compote through the cheesecake batter. Bake for 50 to 60 minutes at 300 degrees F until the center sets. Cool to room temperature and then for a couple of hours in the fridge until completely cool, leaving it in the springform pan while it cools.

      To construct the cake, place the cooled vanilla cake on top of the cheesecake in the springform pan. Invert the cake and cheesecake layers onto the serving plate, remove the springform pan and peel off the parchment paper, which is now on top of the cake. Frost the entire cake with Vanilla Whipped Cream and garnish with additional raspberries before serving.

      Vanilla Whipped Cream

      2 cups whipping cream
      6 tbsp icing sugar (powdered sugar)
      2tsp vanilla extract

      Beat together until firm peaks form.

      In the week leading up to Mothers Day we have been featuring plenty of ideas for a great celebratory brunch including over 100 ideas on our Pinterest Brunch Board. Our final suggestion in time for the occasion is another version of our very popular cheesecake scones, this time featuring a favorite combination of raspberry, chocolate and vanilla. Yes, these are just as utterly delicious as they look. How bad can cheesecake chunks baked right into a scrumptious scone be anyway?



      Chocolate Raspberry Cheesecake Scones

      To prepare the cheesecake mix together:
      One 8 ounce block cream cheese
      1/3 cup sugar
      2 tsp vanilla extract
      1 egg

      Pour into a parchment lined loaf pan. (I have some small silicone loaf pans that were perfect for this purpose)

      Bake at 300 degrees F for about 25-30 minutes or until the center of the cheesecake is set. Cool completely before placing in the freezer overnight. Remove the parchment paper from the cheesecake and cut it into 1/2 inch cubes. Return the frozen cubes to the freezer until ready to add to the scone dough.

      I start the scone dough in my food processor because it is so fast but they can be made just as easily in a large bowl by cutting the butter in with a pastry blender or even 2 knifes held between the fingers.

      In a food processor, combine:
      2 3/4 cups flour
      2/3 cup cocoa
      1/2 cup sugar (optional, these actually work as a no sugar added recipe)
      5 tsp baking powder
      1 tsp baking soda
      ½ tsp salt

      Cut in:
      ¾ cup very cold butter, cubed
      Pulse process until this mixture resembles a coarse meal. It is very important that pea sized pieces of butter remain in this mixture.

      Mix together:

      2 tbsp lemon juice
      2 tsp vanilla extract
      1 1/4 cups milk

      Pour this over the surface of the dry mixture. Toss all together gently with a fork only enough to form a dough ball. When the flour is almost incorporated, fold in

      the frozen cheesecake cubes
      1 ½ cups frozen raspberries
      Frozen berries work well because they are less delicate and easier to incorporate into the scone dough It is important that you work this dough as little as possible or the finished scones will be too dense and heavy.

      If desired you can brush the tops of the scones with an egg wash of 1 egg beaten together with 1 tbsp water. You can sprinkle the tops with turbinado sugar if desired but this is, of course, optional but is shown in the photo.

      Bake at 375 degrees F for 25 minutes. Baking time will vary depending on the size of your biscuit cutter. This recipe makes 8 large scones.

      To make 16 smaller scones make smaller triangles or use a small biscuit cutter and bake for only about 15 - 20 minutes.

      Chocolate Glaze

      Melt together

      1/2 cup chocolate chips
      1 tbsp butter

      Blend in until smooth:

      1/2 cup icing sugar (powdered sugar)
      2 tbsp milk

      Drizzle over the warm scones

      Blueberry Cheesecake Scones


      After the wild success of last weeks Cherry Cheesecake Scones, I just couldn't resist sharing another version of this amazing new scone idea, this time with big ripe juicy blueberries! Man, are these ever good! Warm, tender scones with crispy, sugary edges, bursting with juicy blueberries and with chunks of vanilla cheesecake baked right in...what's not amazing about that?! If you bake at all or ever wanted to start, you simply must try these outstanding scones.

      You will need to prepare the cheesecake the previous day so you can freeze it overnight.

      To prepare the cheesecake mix together:

      1 1/2 cups blueberries
      the frozen cheesecake cubes

      Frozen berries work well too because they are less delicate and easier to incorporate into the scone dough It is important that you work this dough as little as possible or the finished scones will be too dense and heavy. Roll to 1 inch thickness and cut out scones with biscuit cutter or in triangles with a sharp knife and place on parchment lined baking sheet.

      If desired you can brush the tops of the scones with an egg wash of 1 egg beaten together with 1 tbsp water. You can sprinkle the tops with turbinado sugar if desired but this is, of course, optional.

      Bake at 375 degrees F for 25 minutes or until light golden brown. Baking time will vary depending on the size of your biscuit cutter. This recipe makes 12 large scones.
