Ultimate Lemon Mousse Cheesecake
If you are a cheesecake lover and a lemon lover, this is your ultimate dessert. I started with a simple, buttery, lemon shortbread cookie base and topped it with a creamy lemon cheesecake where whipped cream gets beaten to soft peaks before being folded into the cheesecake batter. A tart and sweet homemade lemon curd tops it all of before being garnished with candied lemon zest; truly a the ultimate tart and sweet, lemon lovers dream dessert.

A word about baking a cheesecake in a bain marie before starting the recipe. A bain marie is simply a water bath that buffers the direct heat from the sides and bottom of the baking pan to more evenly bake the cheesecake from the sides to the center.

I bake my cheesecakes in a 9 or 10 inch spring form pan that has the bottom and sides wrapped in multiple layers of wide heavy duty aluminum foil which forms a sort of boat that the cheesecake pan sits in. The roll of aluminum foil that I use is about 16 inches wide. I use at least 4 layers of foil to make sure that no water leaks in and ruins the crust of my cheesecake. The aluminum foil wrapped pan is then placed inside a larger baking pan; I use a 12 inch cake pan. Boiling water is then poured into the larger pan filling it from 1/2 to 2/3 of the way to the top.

I find it best to pour the boiling water into the pan after it is placed on the rack in the oven as you are less likely to splash water onto the cheesecake or inside the aluminum foil. I reuse the aluminum foil for several future cheesecakes, adding a couple of layers to it each time just to be safe.

Even if you choose not to use the bain marie method, wrapping the spring form pan with a few layers of foil, really helps to buffer the heat and help the cheesecake bake more evenly.

For the lemon cookie base. (A graham wafer crumb base is easily substituted if you prefer.)

  • 1 cup flour
  • 1/2 cup icing sugar (powdered sugar)
  • small pinch salt
  • 1/2 cup cold butter, cut in cubes
  • 1 tsp lemon extract
  • 1 large egg yolk
  • 1 tsp lemon zest , finely minced

Sift together the flour, icing sugar and salt. Mix in the lemon zest . Set aside.

Rub the butter into the dry ingredients with your fingers until it is well incorporated and the mixture becomes crumbly, like a coarse meal

Whisk together the egg yolk and lemon extract Add to the crumbly dry mixture and mix in until a soft dough forms.

Wrap the dough in plastic wrap and chill in the fridge for at least a half hour.

Press evenly into the bottom of a parchment paper lined 9 or 10 inch spring form pan. Dipping your fingers into flour helps if the dough is too sticky. Bake at 350 degrees F for 25-30 minutes. Let cool for 15-20 minutes before adding the cheesecake batter.

Lemon mousse cheesecake batter

Cream together:
  • 3 eight ounce packages ounces cream cheese
  • 1 cup sugar

Add, one at a time
  • 3 eggs

beating well after each addition. Add
  • 1 tsp vanilla extract
  • 1 tsp lemon extract

Finally blend in
  • 1 cup whipping cream, whipped to soft peaks
  • zest of one large lemon, finely minced

Pour over the prepared and cooled base and bake in a bain marie at 300 degrees F for about 1 hour  and 15 minutes. The cheesecake does not have to brown at all in order to be fully baked; the surface of the cheesecake should lose any shine when the cake is properly baked. It can still be slightly wobbly just at the center at this point.

Remove the cake from the oven and run a sharp knife completely around the edge of the pan. This will allow for the cheesecake to shrink as it cools and hopefully not crack (but who cares if it does? I am never bothered by a crack or two in the surface) Allow the cheesecake to cool thoroughly on a wire rack at room temperature for an hour or so before cooling it completely for a few hours or overnight in the fridge. 

Lemon Curd

In a small saucepan combine:

  • 4 lightly beaten egg yolks
  • 2/3 cup sugar
  • 1/3 cup fresh lemon juice
  • zest of half a lemon, finely minced
  • 1/3 cup butter cut into small pieces

Cook all ingredients except butter together slowly over medium low heat for about 10 minutes stirring constantly until the mixture thickens enough to coat the back of a wooden spoon. Remove from heat and stir in the butter a few pieces at a time until completely smooth. Cover with plastic wrap and chill completely in the fridge. Spread evenly on top of the chilled cheesecake and garnish with candied lemon zest.

Candied lemon zest

  • 1 cup sugar
  • 2/3 cup water
  • zest and juice of one large lemon 
  • additional sugar (about a cup)

Remove the zest of the lemon in large pieces using a sharp vegetable peeler. You want to avoid using too much of the pithy white layer.

Add tot he saucepan along with the 1 cup of sugar,  water and lemon juice.  Simmer very slowly for 15 minutes, then remove the candied zest from the syrup and let it drain on a wire rack.

When drained cut it into thin strips and toss it in the additional sugar. Let sit for a half hour or longer before using as a garnish.

Note: This candied zest can be stored in the sugar for several weeks in a mason jar. 

Don't throw out the sugar. Use it to make lemon shortbread cookies or when making lemon pound cake. 

The syrup can also be stored for a couple of weeks. Use it to brush on a lemon pound cake or even as a delicious substitute for maple syrup on blueberry pancakes.

Chocolate Orange Shortbread Sandwich Cookies
Yes, I know...another chocolate orange recipe...but I can't help it, it's one of my absolute favorite flavor combinations. I guess because of its connotation with the Terry's Chocolate Orange it just feels Christmas-y to me and when it comes time to start planning holiday baking ideas, I always try to think of a new way to feature a now classic flavor combo.

This year, we are featuring several new shortbread ideas so a buttery, chocolate shortbread was on my list. These cookies are really delicious all on their own or with chocolate chips or toasted nuts mixed in but the luscious chocolate orange filling takes them up another notch.


Chocolate Orange Shortbread Sandwich Cookies

Buttery chocolate shortbread cookies sandwiched together with a simple but decadent chocolate orange filling. Perfectly scrumptious to serve at an elegant afternoon tea.

Prep time: 1 hour 15 minutes including time to chill the dough.
Cook time: 12-13 minutes
Total time: About 1 1/2 hours
Yield: About 1 1/2 dozen small sandwich cookies

Ingredients
  • 1 1/2 cups butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 tsp vanilla extract
  • 3 cups plus 2 tbsp all purpose sifted flour
  • 1/2 cup sifted cocoa
  • 1/4 tsp fine salt
  • FOR THE GANACHE FILING
  • 1 cup dark chocolate chips (or semisweet)
  • 1/4 cup whipping cream
  • Zest of one small orange, finely minced
Cooking Directions
  1. Cream the butter, sugar and vanilla very well.
  2. Sift together the cocoa, flour and salt.
  3. Work the dry ingredients into the butter mixture until a dough forms.
  4. Wrap the dough in plastic wrap and chill for one hour in the fridge.
  5. Roll the dough out to 1/8 inch thick or a little thicker (3-4 mm).
  6. Cut out cookies with a small,1 1/2 inch (4 cm) cookie cutter.
  7. Bake on a parchment lined cookie sheet in a preheated 350 degree oven for about 12-13 minutes.
  8. Let the cookies cool completely before sandwiching them together with a little of the chocolate orange ganache.
  9. TO MAKE THE GANACHE FILLING, scald the whipping cream to almost boiling.
  10. Pour the scalded cream over the chocolate chips in a double boiler and stir only until the chocolate has melted.
  11. Stir in the finely minced orange zest.

    I thought I was the only shortbread obsessive in our family; sure, everybody here does love them but it seems we have a new avid enthusiast recently who has been eating these particular treats straight from the freezer! Yes, Olivia, I know it was you!

    I went to pull some out of the freezer the other day when my mom visited and there were only 2 left out of the entire batch! Liv loves toasted hazelnuts and chocolate too, so the combination with buttery shortbread was apparently too much to resist because she practically polished off half the batch over the course of  the week, sneaking them one at a time from the basement freezer. If you are so easily tempted you may want to make these closer to the Holidays as there seems to be no safe place for these to hide.


    Hazelnut Chocolate Shortbread Cookies

    Just a few simple ingredients is all it takes to create these nutty, all-butter shortbread cookies with a light drizzle of chocolate.
    Prep time: About an hour or two including chilling time for the dough
    Cook time: 15-18 minutes per cookie sheet
    Total time: About 2 hours
    Yield: 4 dozen cookies

    Ingredients
    • 2 cups unsalted butter
    • 3/4 cup sugar
    • 2 tbsp pure vanilla extract
    • 4 cups flour
    • 1/2 tsp salt
    • 1 1/2 cups toasted, roughly chopped hazelnuts
    • 1/2 cup dark chocolate chips
    • 1 tbsp whipping cream
    Cooking Directions
    1. Toast the hazelnuts on a cookie sheet in a 350 degree oven for about 5-7 minutes until the skins begin to have a cracked appearance.
    2. Spread a clean tea towel on the counter top and sprinkle the hazelnuts onto it.
    3. Cover with another clean tea towel and roll the hazelnuts with a flat palm between the two towels to remove the skins. They may not all be perfectly clean but a few skins left on is perfectly okay.
    4. Let the hazelnuts completely cool to room temperature before chopping them roughly with a large sharp knife. 1/4 to 1/2 sized nut pieces are best.
    5. Cream together the butter sugar and vanilla until very light and fluffy.
    6. Gently fold in the flour and salt until the dry ingredients are almost completely incorporated.
    7. Add the chopped hazelnuts and work into a soft dough.
    8. Form the dough into two 1 1/2 inch wide logs.
    9. Wrap the dough logs in plastic wrap and chill for a couple of hours. (Note: This dough will be fine in the fridge for several days if you want to bake off the cookies a few at a time as needed.)
    10. Preheat oven to 350 degrees when ready to bake the cookies.
    11. Using a very sharp knife, cut 1/4 inch slices of dough from the log and place 2 inches apart on a parchment lined baking sheet.
    12. Bake for about 15-18 minutes until the bottom edges are noticeably golden brown.
    13. Transfer to a wire rack to cool completely.
    14. Melt together the chocolate chips and whipping cream in a double boiler.
    15. Using a piping bag or a ziploc bag with the corner snipped off, drizzle the chocolate over the surface of the cookies and let stand until the chocolate is set.
    16. Store in an airtight container. Freezes well.
    17. You can also drizzle these with white chocolate if you prefer.

    6. Preheat oven to 350 degrees when ready to bake the cookies.

    I am an absolute nut for a good buttery shortbread cookie. They are simple perfection. I have had chocolate chips in shortbread cookies before but was a little skeptical about adding the espresso flavour. The result though, was fantastic with the full flavour of the coffee, chocolate and buttery shortbread all fully present but well balanced in this wonderful, simple little treat.


    Espresso Chocolate Chip Shortbread Cookies

    Espresso Chocolate Chip Shortbread Cookies - easy buttery shortbread cookies with the amazing flavor combination of coffee and chocolate. A perfect afternoon tea or coffee cookie and they freeze really well too.

    Prep time: 1 hour 20 minutes, including 1 hour chilling time
    Cook time: 25 minutes
    Total time: Under 2 hours
    Yield: Approximately 18 cookies, (variable according to the size you choose to make them.)
    Ingredients
    • 1 1/2 tbsp instant espresso powder
    • 1 tbsp hot water
    • 1 cup butter (real butter, no substitutes)
    • 2/3 cup icing sugar (powdered sugar, confectioners sugar)
    • 1 teaspoon pure vanilla extract
    • 2 cups plain flour
    • 3/4 cup dark chocolate chips
    Directions
    1. Dissolve the espresso powder in the hot water and set aside to cool. Meanwhile in the bowl of an electric mixer cream the butter and icing sugar very well until light and fluffy.
    2. Add the dissolved espresso powder and the vanilla extract and blend in well. Finally add the flour and work into the butter mixture until almost incorporated.
    3. Add the chocolate chips and stir in by hand with a wooden spoon so as not to break up the chocolate chips in the mixer.
    4. Press the dough together into a ball (or better shape into a flat square). Wrap with plastic wrap and refrigerate for an hour or two. Roll out into a square about 1/4 inch thick. Place on a parchment paper lined cookie sheet and trim the edges.
    5. Cut the cookies into your desired shape, squares, rectangles, triangles but keep the sheet of dough all together on the cookie sheet, you will break the cookies apart later.
    6. Bake at 325 degrees F for 20-25 minutes or until the edges are lightly browned. These will not get very dark as they bake. Cool on the pan for 15 minutes and then on a wire rack.

    Pear and Ginger Coffee Cake with Almond Shortbread Crumble Topping

    This delicious coffee cake was born of the necessity to put to good use some of the large bag of pears we bought last weekend. Pears are Spouse's favourite fruit so I decided to "pair" them with ginger, which is probably Spouses favourite spice. I added a little of my favourite Chinese five spice to the mix and since the almond shortbread crumble topping was such a success on our Cherry Swirl Almond Crumble Coffee Cake I decided to add it to this one as well. My willing taste-testers at the office had this moist, delicious coffee cake reduced to crumbs in minutes.

    Pear and Ginger Coffee Cake with Almond Shortbread Crumble Topping


    Coffee Cake

    Sift together and set aside:

    2 2/3 cups flour
    3 tsp baking powder
    3 tsp powdered ginger
    1 tsp Chinese five spice powder

    In the bowl of a stand mixer with the whisk attachment in place, whisk together on high speed until foamy and slightly stiffened.

    2 eggs
    1 1/4 cups sugar
    2 tsp vanilla extract
    ½ tsp almond extract (optional)

    Mix together in a measuring cup with a spout:

    1/4 cup melted butter
    1/4 cup vegetable oil

    Slowly add the oil and butter mixture to the egg mixture in a slow stream as the mixer continues to whisk.

    Mix together
    1/2 cup whipping cream
    1/2 cup milk
    2 tbsp apple cider vinegar

    Add slowly to the mixing bowl continuing to mix but at a reduced speed. Stir in:

    2 tbsp very finely grated fresh ginger

    Fold in the dry ingredients by hand with a rubber spatula being careful not to over mix. Don't worry about small lumps in the batter, they are fine. When the flour is almost incorporated, fold in:

    2 large or 3 small pears, peeled and diced (about a half inch dice is fine)

    Pour the batter into a greased and floured 10 inch spring form pan.

    Almond Shortbread Crumble

    1/3 cup ground almonds
    2/3 cup flour
    1/3 cup butter
    ½ tsp vanilla extract
    Pulse together in a food processor or rub the butter into the flour with your hands until fully incorporated.

    Add the crumble topping by squeezing together handfuls of the crumb mixture and breaking off small pieces, which get scattered all over the surface of the batter.  You can also add in some slivered almonds and a few extra cherry pieces with the crumble for an extra flourish of garnish. 

    Bake for 50-60 minutes at 350 degrees F or until a toothpick inserted in the center comes out clean. The toothpick test is definitely the best way to ensure that this cake is fully baked. Cool in the pan for about 10 minutes before moving to a wire rack to cool completely or serve while still warm.

    Here's another flavor combination in our growing collection of coffee cakes. This delicious almond and vanilla flavored cake gets a swirl of sweet cherry compote through  the cake before being topped by a buttery almond shortbread crumble.     Cherry Compote

    2 cups pitted cherries
    ½ cup sugar
    3 tbsp water

    Simmer together for only a few minutes.

    Stir together:

    1 ounce water
    1 rounded tbsp corn starch

    Add quickly to the simmering cherries stirring constantly. Cook for only a minute before taking off the heat and allowing it to cool to almost room temperature.

    Coffee Cake

    Sift together and set aside:

    Chocolate Swirl Vanilla Crumble Coffee Cake

     
    What a great centerpiece to a weekend brunch this amazing coffee cake would make. Everyone at that table would surely be appreciative of this moist, delicious collision of chocolate and vanilla. I've always considered coffee cake to be a big slice-able muffin and as I'm writing this, I am thinking, "Maybe I should have made this as coffee cake muffins."; perhaps that's an idea for the future.

    There is also a great combination of textures in this cake with the addition of a vanilla shortbread crumble topping and a drizzle of melt-in-your-mouth chocolate ganache. This new recipe may well be my new favorite go-to coffee cake for my weekend brunches.

    Grease and flour a 10 inch tube pan or bundt cake pan very well and preheat oven to 325 degrees F.

    Prepare the vanilla crumble by pulsing together in a food processor until well combined.

    2/3 cup flour
    1/3 cup butter
    2 teaspoons vanilla extract

    To prepare the cake batter begin by sifting together

    2 cups all-purpose flour
    1 tablespoon baking powder
    1/4 tsp salt

    In the bowl of an electric mixer, beat together at high speed until very foamy

    4 large eggs, at room temperature
    1 & 1/2 cups sugar
    2 tbsp vanilla extract
     
    In a large measuring cup melt
    1/2 cup butter, then mix in
    1/2 cup vegetable oil

    Slowly add this butter and oil mixture to the egg and sugar mixture as it continues to beat.

    Fold in the dry ingredients alternately with

    1 cup whole milk, at room temperature

    When alternating wet and dry ingredients, always begin and end with the dry mixture. Here I folded in the flour in three divisions and the milk in two divisions.

    Divide the batter in two equal portions and pour half of the batter into the greased and floured pan.

    To the remaining half of the batter quickly beat in

    1/3 cup cocoa
    3 tbsp milk

    Spoon the chocolate batter in large spoonfuls all over the surface of the vanilla batter in the pan. Using the handle of a wooden spoon, swirl the chocolate batter through the vanilla batter in a random pattern.

    Add the crumble topping by squeezing together handfuls of the crumb mixture and breaking off small pieces which get scattered all over the surface of the batter.

    Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. The toothpick test is definitely the best way to ensure this cake is fully baked. Cool in the pan for about 10 minutes before inverting onto a wire rack covered in a clean tea towel. Remove the pan and then placing another wire rack on top and flipping the cake again so that the crumble is on top. Serve warm or cold. You can drizzle some chocolate ganache over the top if you like.

    Chocolate Ganache

    In a double boiler melt together

    1 cup dark chocolate chips
    1/4 cup whipping cream

    Spoon the ganache into a Ziploc bag and snip off a corner with scissors, then squeeze the ganache through the hole all over the surface of the cake.
