Homemade Cherry Ice Cream Bon Bons {Dairy-Free Option}


CHOCOLATE + CHERRIES go so perfectly together!  

With this heat wave going on in Northern California, I knew I had to make some homemade ice cream ... I mean why not?  Ice cream is mandatory when summer heat hits!  At least it is in my book.  

One of my family's favorite fruits is cherries.  We all love them + I love ice cream, so I decided to make homemade cherry ice cream for us.  But I didn't stop there, I decided to make something extra special ... 


CHERRY ICE CREAM BON BONS

Homemade Blackberry Ice Cream Bon Bons {Dairy-Free Option}


Summer is on it's way to Northern California.  Sunny and HOT + close to 100 degrees by the end of the week!  Yikes!  I am not ready for summer weather ... but I am ready for lots and lots of Homemade Ice Cream.  

I LOVE ice cream!  I simply can't get enough of it, especially when the warmer weather starts ... who am I kidding, I love it year-round!  I make it often + my sweet husband always makes sure I have some organic, grass-fed ice cream in the freezer {I love this man!}.

If you haven't, you're in for a big treat.  These sweet little mounds of ice cream covered with chocolate are perfect in every way.  My family loves them + they're always a crowd pleaser at parties and gatherings. 



Have you been to any local farmers markets recently?  We just went over the Mother's Day weekend and we saw tons of fresh berries.  Warmer weather means summer fruit will be coming to most farmers markets.  If you see some blackberries, make sure to grab a bunch because these gorgeous, dark beauties make some seriously delicious + beautiful ice cream.  If your blackberries are really ripe, they'll make the most stunning purple ice cream ... but if they're early in the season, the ice cream will be a rich pink.

Creamy Turmeric + Ginger Tea {Dairy-Free Option}


A while back one of my Facebook readers shared that her favorite warming drink in the morning is this Creamy Turmeric Tea {that she found on Mark's Daily Apple}.  I had been drinking lots of my Honey-Sweetened Hot Chocolate in the mornings with a bunch of cinnamon and ginger + adding butter {or ghee} and copious amounts of coconut oil to it.  Now, I LOVE LOVE LOVE my hot chocolate + it's extra delicious with cinnamon, ginger, butter and coconut oil ... but I figured I would check out the recipe my FB reader shared to change up my usual morning warming drink ... especially since everyone is talking about the health benefits of TURMERIC these days.

Since I wanted to make this drink extra nourishing, I changed it up a bit by adding pasture butter + coconut oil*.  I love pasture butter for it's omega 3 fatty acids + CLA (conjugated linoleic acid) ... who am I kidding, I love it because it tastes so good and makes me feel good!  But, I also love it because it's a nourishing fat and helps the body absorb minerals + it's a good source of vitamin D, E and K.  Coconut oil is wonderful for so many reasons too ... I love it because it's high in lauric acid {which is also found in amazing liquid gold a.k.a breastmilk} + it has immune-boosting properties, it's naturally anti-viral, anti-bacterial, anti-fungal + helps fight of yeast.  And for all of my nursing mommy readers - coconut oil is SO good for you and your baby, it helps increase your lauric acid and can boost milk supply!  


And of course, I couldn't make this drink without cinnamon!  I LOVE cinnamon and it's warming properties, so I decided to add some.  Why not?  If you don't like cinnamon, just leave it out.  


CREAMY TURMERIC + GINGER TEA

This warming drink is full of nourishing, immune-boosting ingredients.  Enjoy a cup with someone you love. {Recipe adapted from Mark's Daily Apple}.

Equipment: Medium-Size Sauce Pan, Blender or Whisk

  • 1 cup raw milk {See Resources}, coconut milk or almond milk
  • 1 cup coconut water {I like this + this} or filtered water
  • 2 teaspoons ground ginger {I buy mine here}
  • 1 teaspoon ground turmeric {I buy mine here}
  • 1 teaspoon ground cinnamon {I buy mine here}
  • 1/16 teaspoon cayenne pepper {I buy mine here}
  • 1 teaspoon vanilla extract
  • 1 tablespoon local raw honey or Manuka honey 
  • 1-2 tablespoons pasture butter or ghee {optional, See Resources}
  • 1-2 tablespoons coconut oil {optional}

1. Place all ingredients into a medium-size sauce pan.  Slowly warm over medium-low heat for about 5-7 minutes {heat to your desired temperature}.  If you are using coconut milk, make sure you do not boil it, it tends to become thick and unpalatable when boiled.  If you're using raw milk, you'll want to heat over a lower heat so you do not destroy the beneficial properties.     

2. If you are adding butter or coconut oil: Place tea into blender and blend for about 10-12 seconds, until the fats are fully incorporated and emulsified.  [Note: Use CAUTION when using the blender, the tea/liquid is very hot and increases in volume when blending.  Make sure to hold the lid on tight while blending or the hot air and liquid can escape making the lid pop off the blender.]

3. Serve hot.  Enjoy immediately. 

Yield: Makes 2 servings

Flourless Chocolate Torte {Grain Free + Dairy Free Option}


Rich, decadent, creamy, chocolatey goodness ... if you love chocolate + cake + truffles, this Flourless Chocolate Torte will not disappoint.  It's so easy to make, and if you're a baker {or a Real Foodie}, you'll probably already have the ingredients on hand ... I almost always do.  So don't wait for a special occasion, make some today and share with someone you love ... trust me there's plenty to go around, it's very rich, so a simple slice is just perfect.

Recipe inspired by: Paleo Flourless Chocolate Cake @ Amee's Savory Dish.  I adapted the recipe just a bit ... both are delicious and full of flavor.  



FLOURLESS CHOCOLATE TORTE

Equipment: Double Boiler or Medium-Size Sauce Pan w/ Heat Proof Glass Bowl, Standing Mixer w/ Whisk Attachment or Hand Held Mixer w/ Large Mixing Bowl


1. Preheat oven to 300 degrees F.

2. Grease a 9" springform cake pan or a 9" round cake pan {a 9" Pie Dish will work too, the edges will come out like a pie though, not with straight edges}.  Line the pan with a circle of unbleached parchment paper {the circle does not have to be perfect, just large enough to roughly fit in the bottom of the pan}.

3. In a doubler boiler {or homemade double boiler - I use a medium-size pan, fill half way with water, and place a heat proof glass bowl on top of the pan}, slowly melt the coconut oil/pasture butter/ghee and chocolate chips over medium-low heat.  Stir constantly to evenly distribute and melt the chocolate.  Remove from heat when the chocolate is fully melted.    



4. Add honey, vanilla, salt and cacao powder.  Stir until honey is melted and fully incorporated.  

5. Using a hand held mixer, beat in the eggs one at a time using medium speed.  If using a Standing Mixer {fitted with whisk attachment}, transfer chocolate mixture to the mixing bowl first, then beat in the eggs.  Mix until fully incorporated.  The batter will be thin.

6. Pour mixture into greased cake pan. 

7. Bake at 300 degrees F for about 40-45 minutes.  Cake should be set, but still a little wet in the middle when done.  The cake will puff up, but will deflate when you remove it from the oven.  Let cool at room temperature for about 20 minutes, then transfer to the refrigerator for a few hours if you can stand it.  Make sure to let it rest in the refrigerator for at least 30 minutes.  

8. Cut each slice with a clean, dry knife; make sure to clean the knife or wash with warm water between slices.


Yield: About 10-12 servings.

Serving Suggestions: Enjoy with a dollop of Homemade Whipped Cream or Homemade Vanilla Ice Cream and serve with some fresh berries.

Storage: Keeps well in the refrigerator for 3 days {but trust me it won't last that long before someone gobbles it up}.  

Note: I dusted the top of mine with organic powdered sugar, this is totally optional.

Grain-Free Carrot Cake Pancakes


My oven stopped working the night before Easter, so that meant the grain-free Carrot Cake that I had planned to make was not in the cards for us.  Little Love was SO looking forward to that Carrot Cake, so I had to come up with something else.  We decided to make pancakes instead, Carrot Cake Pancakes!  They were a huge hit.

Grain-Free Carrot Cake Pancakes

Advance preparation is required, the dates need to be soaked at least an hour (or soak them overnight, that’s what I do). 

Equipment: Small Bowl, Food Processor or Blender, Medium Size Mixing Bowl, Peeler, Standing Grater, Microplane Zester/Grater, Hand Mixer or Wisk, Large Skillet or Griddle, Flipper Spatula

Soaked Dates/Pureed Date Mixture
·      8 dates
·      Filtered water, enough to cover the dates

Carrot Cake Pancakes
·      4 pastured or organic eggs (See Resources)
·      1 medium size carrot, peeled and finely grated
·      ¼ teaspoon fresh ginger, peeled and grated/minced
·      ¼ cup coconut flour
·      ½ teaspoon ground cinnamon
·      ¼ teaspoon baking soda
·      1 tablespoons organic maple syrup grade B
·      ½ pureed date mixture
·      2 tablespoons date soak water
·      2 tablespoons ghee, coconut oil or pasture butter (See Resources)

Cream Cheese Topping
·      7 ounces homemade or organic cream cheese, room temperature
·      2 tablespoons organic maple syrup grade B
·      ½ pureed date mixture
·      2 tablespoons date soak water
·      ½ teaspoon fresh ginger, peeled and finely grated/minced

1.    1 hour prior to making pancakes (or the night before, my preference), place dates in a small bowl and cover with filtered water, about ½ cup of filtered water or enough to completely cover the dates.  Place dates in the refrigerator until ready to use. 


2.   Break dates in half and remove pit.  Add date flesh to food processor fitted with “s-shape” metal blade.  Add a couple of tablespoons of the date soak water to the food processor.  SAVE the date soak water, set aside.  Pulse until dates become pureed.  Add more date soak water if necessary to combine.  Leave in the food processor and set aside (you will use the food processor again, so make sure to leave it as is and set aside).


3.   Start preheating skillet or griddle, melt ghee, coconut oil or pasture butter over medium-low heat.

4.   Pancake Batter: In a medium size mixing bowl add eggs, grated carrot, grated ginger, coconut flour, cinnamon, baking soda, maple syrup, ½ of the pureed date mixture, and 2 tablespoons date soak water.  Using a hand mixer, mix on low speed until all ingredients are combined.



5.    When skillet/griddle is ready, pour about 1/8 cup batter onto skillet/griddle.  Cook for about 2 minutes, flip and cook for another 2 minutes, repeat until all pancake batter is used. 

6.   Cream Cheese Topping: Using food processor with ½ of the pureed date mixture already in it, add cream cheese, maple syrup, 2 tablespoons date soak water and grated ginger.  Pulse until combined and smooth.  Set aside.


7.   To Assemble: Serve pancakes layered, top each pancake with a layer of Cream Cheese Topping, or to make dairy-free, serve pancakes with organic maple syrup grade B.  [Note: You can use a frosting bag or small reclosable plastic bag (cut a small opening in one corner of the bag to make the frosting tip), add topping into frosting bag, pipe topping onto pancakes.]



Yield: Makes about 11 small pancakes.

Storage: If you have extra pancakes leftover, the keep well in the refrigerator and can be reheated over low heat on the stovetop or on a warming temperature in the oven.  Cream Cheese Topping can be stored in the refrigerator for extra use too.

Chocolate Covered Frozen Banana Bites


Little Love turned 5 last month and requested “little snacks” for her party.  She wanted to have a special treat to go along with her chocolate strawberry cake too, so we decided to make chocolate covered frozen banana bites.

Guess what this mommy did?  I FORGOT TO SERVE THEM!  Oh well, we enjoyed them later that night for dessert.

Chocolate Covered Frozen Banana Bites

These are so delicious and easy to make.  ***Advance Preparation Required***

Equipment: Medium-Size Saucepan, Heat Resistant Glass Bowl, 2 Small Bowls, Large Freezer-Safe Dish (I use a 9x13 casserole dish) or Pan, Unbleached Parchment Paper

·      1 ½ cups gluten free chocolate chips/chocolate*
·      2 tablespoons coconut oil or ghee
·      2 ripe organic bananas, cut into ½ inch chunks
·      Raw shredded coconut
·      Raw cacao nibs
·      Small amount of water

1.    Add small amount of water to saucepan, about ½ cup.  Place heat resistant bowl over the saucepan creating a double boiler.  Add chocolate chips and coconut oil (or ghee) to the bowl, heat over medium-low heat, stirring until chocolate has melted.  Remove bowl from pan, set aside to cool for about 10 minutes. 


2.   Prep bananas, cut into ½ inch chunks. 


3.   Add shredded coconut and cacao nibs to separate small bowls. 


4.   Line 9x13 dish or pan with unbleached parchment paper. 

5.    Using fingers, dip 1 banana chunk into the melted chocolate.  Immediately dip top of banana into topping of choice.  Place on parchment paper in the dish.  Repeat until all bananas are coated. 


6.   Place dish in freezer, freeze at least 4 hours to overnight.

7.   Serve frozen. 


Yield: Makes about 21 pieces.

*Note: If you have the time to make your own chocolate chips, go for it!  But, if you’re like me and that just makes one extra step that you don’t have time for, look for a healthier version of chocolate chips or chocolate bar.  There are some great allergy-free chocolate chips available now, make sure to look for brands that do not use refined sugars, fillers or soy.

Soaked Oats Muesli – Fall/Winter Version


Winter is over, but I have been meaning to share this recipe for a while now.  It’s a little late, but winter fruits still seem to be available in the markets.

Muesli is a delicious, simple breakfast (or snack), it’s easy to make and takes minutes to put together, although it does take advance preparation the day before. 

Soaked Muesli – Winter Version

Skip the processed cereal and try this version instead.

*** Note: 24 hours Advance Preparation Required ***

Equipment: Large Mason Jar (1 quart) or Glass Bowl w/ Lid, Large Fine Mesh Strainer, Large Bowl

·      2 cups gluten-free rolled oats (I use Bob’s Red Mill)
·      2 tablespoons chia seeds (I get my chia seeds here)
·      2 ½ cups warm filtered water
·      2 tablespoons fresh lemon juice, unfiltered organic raw apple cider vinegar, whey, or kefir (my preference is lemon juice)

·      1 teaspoon ground cinnamon (I prefer Sweet Cinnamon)
·      2-3 cups of chopped organic seasonal fruit: persimmon (peeled), apples, pears, kiwi, oranges, mandarins, tangerines, tangelos, banana (sliced), grapes, pomegranate arils, passion fruit, kumquats, cranberries
·      ½ cup shredded coconut (optional)
·      ½ cup soaked/”crispy” nuts or soaked and sprouted seeds (optional)

24 hours Before Making Muesli

1.    Place oats and chia seeds in a large Mason jar or glass bowl with lid.  Cover with 2 ½ cups warm filtered water (warmer than room temperature) and lemon juice/apple cider vinegar/whey/kefir.  Cover with lid.  Leave out on the counter, out of the sunlight, for 24 hours. 


Making the Muesli

1.    Strain soaked oats and chia seed mixture through fine mesh strainer. 


2.   Place oats and chia seed mixture in large bowl. 

3.   Prep fruit – chop or dice. 

4.   Add fruit to the soaked oats and chia seed mixture.  Gently stir to combine. 

5.    Serve immediately or store in the refrigerator for later.  Top with optional toppings (see below).

Soaked Oats Muesli w/ Kiwi, Apple, Pear, Raw Honey and Raw Milk

Yield: About 6 servings.

Optional Toppings/Mix-Ins: Shredded Coconut, “Crispy” Nuts/Soaked Nuts, Soaked and Sprouted Seeds like sunflower, Raw Milk or Raw Cream, Coconut Milk, Dried Fruit, Raw Honey or Organic Maple Syrup Grade B.

Storage: Store in an airtight container in the refrigerator, keeps for several days.

Nursing Mom or Pregnant? This makes a great snack/meal, it’s simple to prepare and requires no cooking.  It’s full of protein and readily available nutrients (due to soaking the oats and chia seeds), it helps boost milk supply too.
