INGREDIENTS:
- 2 pounds chicken wings
- 1 teaspoon cayenne pepper (or more to taste)
- salt and pepper to taste
- 1 cup clover honey
- 1/2 cup butter, melted
- 1/2 (4 ounce) bottle of Red Habanero Hot Sauce
- Freshly chopped cilantro for garnish
- Preheat an outdoor grill to medium heat and lightly oil grate. Wash and dry the wings. Season the meat with cayenne, salt, and pepper to your liking.
- Cook the chicken wings on the preheated grill until cooked through and juices run clear, 20 to 30 minutes depending on the size of the wings. While cooking, baste the wings using 1/2 cup of honey.
- Prepare the hot sauce by melting 1/2 cup butter in a large microwave safe bowl. Add in the remaining 1/2 cup of honey and 1/2 bottle of Red Habanero Hot Sauce and mix well. Give it a taste and adjust the flavors to your liking. Add more hot sauce if you like 'em fire-in-your-belly hot.
- Remove the wings from the grill and immediately toss them in the hot honey butter sauce to coat. Return the wings to the grill to set the sauce and baste some more while cooking until sauce starts to caramelize. Remove to a serving platter and garnish with chopped cilantro. Enjoy!
- If the weather doesn't cooperate and you need to cook them in the oven, no worries! Here's the how-to: Preheat the oven to 375°F. Use a rack placed on a cookie sheet. Place wings on the rack in a single layer, season with cayenne, salt, and black pepper. Baste with 1/2 cup honey and cook for about 30 minutes until cooked through and juices run clear. Toss cooked wings in honey butter sauce and then place the wings back on the rack and place under the broiler for a minute or so until the sauce starts to caramelize. Watch them closely while under the broiler or they will burn to a crispy critter quickly!
