Spaghetti Squash & Sausage Recipe


INGREDIENTS:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 kielbasa sausage, sliced
  • 1 spaghetti squash
  • 1 lemon
  • 1 teaspoon parsley
  • salt & pepper to taste

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Cut spaghetti squash in half and scrape out seeds. Place spaghetti squash with cut sides down on a greased baking sheet. Bake 30 minutes, or until a sharp knife can be inserted with only a little resistance.
  2. Meanwhile heat olive oil in a pan on medium heat. Cook sausage and garlic over medium heat until browned and heated through.
  3. With spaghetti squashed cooked, gently scrape out flesh with a fork into a bowl. Toss with the juice of one lemon, parsley and sausage. Add salt and pepper to taste.
  4. Serve hot with sausage.
