INGREDIENTS:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 kielbasa sausage, sliced
- 1 spaghetti squash
- 1 lemon
- 1 teaspoon parsley
- salt & pepper to taste
INSTRUCTIONS:
- Preheat oven to 350 degrees. Cut spaghetti squash in half and scrape out seeds. Place spaghetti squash with cut sides down on a greased baking sheet. Bake 30 minutes, or until a sharp knife can be inserted with only a little resistance.
- Meanwhile heat olive oil in a pan on medium heat. Cook sausage and garlic over medium heat until browned and heated through.
- With spaghetti squashed cooked, gently scrape out flesh with a fork into a bowl. Toss with the juice of one lemon, parsley and sausage. Add salt and pepper to taste.
- Serve hot with sausage.
