Stuffed Tomatoes Recipe
INGREDIENTS:
4-5 ripe tomatoes, the insides scooped5 hard boiled eggs200g/7oz feta cheese100g/3.5oz light mayoa bunch of fresh parsley, chopped1 tbsp lemon juicesalt and pepper
INSTRUCTIONS:
1. In a bowl, combine the ingredients for the tomatoes's filling.2. Mash the mixture to a thick consistency.3. Stuff the tomatoes and cover with their lids.4. Serve chilled!
