- 1 tablespoon olive oil
- 3 large onions, sliced
- Pinch of salt
- 2 lean ground beef
- 2 eggs
- ¾ cup Italian-style breadcrumbs
- ¼ cup ketchup
- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cups roughly chopped fresh spinach leaves
DIRECTIONS:
- In a large frying pan or skillet, heat olive oil to medium-low. Add onions and salt, and caramelize for about 30 minutes, stirring occasionally. Add 1 tablespoon water to release brown bits from pan. Remove from heat and allow the onions to cool.
- While the onions caramelize, prepare the meatloaf. Preheat oven to 350˚ (180˚C).In a large bowl, combine the remaining ingredients. Stir in the caramelized onions
- On a parchment-lined baking sheet, form a loaf with the meat mixture. Bake for 50 - 60 minutes or until internal temperature reaches 155˚F (68˚C). Let rest for about 10 minutes before slicing and serving.
