Spinach & Caramelized Onion Meatloaf Recipe

Spinach & Caramelized Onion Meatloaf

INGREDIENTS:
  • 1 tablespoon olive oil
  • 3 large onions, sliced
  • Pinch of salt
  • 2 lean ground beef
  • 2 eggs
  • ¾ cup Italian-style breadcrumbs
  • ¼ cup ketchup
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups roughly chopped fresh spinach leaves

DIRECTIONS:
  1. In a large frying pan or skillet, heat olive oil to medium-low. Add onions and salt, and caramelize for about 30 minutes, stirring occasionally. Add 1 tablespoon water to release brown bits from pan. Remove from heat and allow the onions to cool.
  2. While the onions caramelize, prepare the meatloaf. Preheat oven to 350˚ (180˚C).In a large bowl, combine the remaining ingredients. Stir in the caramelized onions
  3. On a parchment-lined baking sheet, form a loaf with the meat mixture. Bake for 50 - 60 minutes or until internal temperature reaches 155˚F (68˚C). Let rest for about 10 minutes before slicing and serving.
