Gluten Free Zesty Skillet Pork Chops

INGREDIENTS:
  • 4 to 6 Pork Chops
  • 1 teaspoon McCormick Chili Powder - gluten free
  • ⅓ teaspoon McCormick Cayenne Pepper - gluten free
  • ½ teaspoon McCormick Garlic Powder - gluten free
  • zest of 1 lime
  • 1 lime juice
  • salt and pepper
  • olive oil
  • 1 cup pineapple, diced
  • 3 tablespoon fresh cilantro, chopped
  • 1 jalapeno pepper, minced
  • ½ of a small red onion, finely chopped

INSTRUCTIONS:
  1. Rub pork chops with chili powder, cayenne pepper, garlic powder then salt and a little black pepper.
  2. Combine the pineapple, cilantro, red onion, lime zest and juice in a medium bowl. Season with salt and pepper then drizzle a little bit of olive oil.
  3. Heat 1 tablespoon of olive oil on a large cast iron skillet to medium high heat. Add pork about 3 to 4 minutes per side.
  4. Place pork on a serving platter and top with the salsa. Serve
