INGREDIENTS:
For Grill and boil:
- 1/2 lb Pork ear
- 2lb Pork belly
- 1/2 lb Pork nape
- 1/2 lb Pork tongue
- 1/2 lb Pork liver
- 1/2 lb Pork intestine (optional grilled or boiled)
- 4 pcs kalamansi (Use Lemon or Lime to substitute)
- 1/4 cup Coconut Vinegar
- 2 Chopped onions
- 4 Chopped chili
- 4 Stalks Chopped green onion
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/8 lb Pork’s brain (boiled)
- 3 spoon Mayonaise (optional)
- Grill all the pork ingredients until golden brown and simmer the pork brain for 10 mins
- Slice the grilled pork into bite size
- In a bowl, mix the sliced grilled pork with the boiled pork brain and the rest of the seasoning
- Add salt and pepper to taste
- Add mayonnaise to make it thick, this is optional.
