INGREDIENTS:
- 1 tbsp olive oil
- 1 pint grape tomatoes
- 1 clove garlic, sliced
- 6 eggs
- 3 tbsps heavy cream
- salt and pepper
- 1 tbsp butter
- 2 ounces soft goat cheese
- fresh herbs (thyme, basil, oregano, or parsley would all be great choices)
INSTRUCTIONS:
- In a heavy skillet, heat the oil over high heat. Add the tomatoes to the pan and cook for 2 minutes without stirring. Stir them around and add the garlic to the pan. Continue cooking for another 2 minutes, stirring often. Remove the tomatoes and garlic from the pan and set aside.
- In a medium bowl, whisk together the eggs, cream and a sprinkle of salt and pepper. Melt the butter in medium skillet over medium heat. Add eggs to the pan. Use a spatula or wooden spoon to fold the eggs over themselves as they start to set. Cook until desired doneness. Stir the goat cheese into the hot eggs.
- Transfer the eggs to a bowl, top with the blistered tomatoes. and garnish with fresh herbs. Serve immediately.
