INGREDIENTS:
- 2 bone-in, skinless chicken breasts (couple of pounds)
- 4 garlic cloves, minced
- 1 small onion, chopped
- 2 tbsp. brown sugar
- Salt and pepper
- ½ tbsp. olive oil
- ½ tbsp. butter, melted
- ¼ cup chicken broth
- ¼ tsp. red chili flakes
- ½ tsp. dried basil
INSTRUCTIONS:
- Preheat oven to 425F. If using a baking sheet, line it with foil. If using a casserole dish, you could be fine without lining it.
- Wash and pat chicken dry. Place into a shallow dish and season with salt and pepper. Set aside.
- In a small pan, add the olive oil and butter and place over medium heat. Add in the onions, sugar, chili flakes, basil, garlic, salt, and pepper. Cook until onions are just translucent, about 5 minutes, Remove from heat.
- Pour the mixture evenly over the chicken breasts. Add additional oil if necessary to keep mixture moist. Pop into the oven and bake for 30 minutes, or until cooked through (check with thermometer to see when chicken reaches 160F.)
- Serve over rice and enjoy!
