INGREDIENTS:
- 1 tablespoon cooking oil
- 3 garlic cloves
- 1/4 teaspoon crushed red pepper flakes
- 1 - 1 1/4 pounds pork tenderloin, thinly sliced
- 1 small head broccoli, cut into small florets (about 2 1/2 cups)
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
For the sauce:
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 1 teaspoon sesame oil
- 1 teaspoon orange zest
- 2 tablespoons cornstarch
INSTRUCTIONS:
- In a large skillet or wok, heat oil to medium-high. Add garlic and crushed red pepper flakes. Saute until fragrant, about 1 minute. Add pork and continue cooking, stirring frequently, until pork is no longer pink, about 5 minutes.
- Add vegetables to pan. Continue cooking for another 5 minutes, stirring frequently.
- In a small bowl, whisk together the sauce ingredients. Pour sauce into pan immediately to prevent clumping, and continue cooking until vegetables are tender but still crisp.
