INGREDIENTS:
- 6 pork chops
- salt and pepper
- ½ stick butter plus 3 tablespoons
- 3 medium onions, thinly sliced
- 3 cloves garlic, chopped
INSTRUCTIONS:
- Season pork with salt and pepper.
- Heat a large cast iron skillet to medium high. Add the ½ stick butter and let it melt.
- Add the pork chops and cook about 4 minutes on each side. Transfer the pork to a plate. Discard the butter and wipe the skillet clean.
- Return the skillet and add 3 tablespoons of butter. Add the onions and slowly cook for about 15 minutes then add the garlic and cook for another 15 minutes. Season with salt and pepper.
- Return the pork and let it cook for 2 minutes or until pork reaches 160 degrees f. Serve
