Vegetable Hash With Eggs Recipe


INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 cups of roughly chopped assorted fresh vegetables (this recipe used: a little onion, bell peppers, broccoli, asparagus, mushrooms, spinach, zucchini, tomato)
  • 2 eggs
  • salt and pepper
  • oregano

INSTRUCTIONS:

  1. Lightly spray a large skillet and then heat a couple tablespoons of olive oil on medium-high.
  2. Add vegetables to skillet. (preferably add tomatoes until almost done)
  3. Sprinkle with salt and pepper.
  4. Saute vegetables about five minutes until slightly tender.
  5. Remove vegetables to plates.
  6. Spray skillet with cooking spray again.
  7. Add eggs, sprinkle with salt and pepper, and cook however you like them.
  8. Remove egg and place on top of vegetables.
